Yesh! It is ONE. DREARY. DAY outside today! Aren't the May flowers suppose to now be blooming after all the April showers????
Anyways...enough whiningJ I'll rewind to last nights dinner which we enjoyed on a glorious (NO HUMIDITY) 75 degree nightJ hahahahahahaha After celebrating a friend's birthday this weekend, I thought I'd recreate the dinner that I had had and loved oh-so-much: Fajita QuesadillasJ
And they couldn't have been any easier. We diced up some chicken, red pepper & onion and sauteed everything until cooked through...
Once everything was ready, I quickly toasted up some wheat tortillas on the stove top to give a nice char. Watch these CLOSELY! They will burn within SECONDS of being on the flamesJ
Top the (toasty) tortilla with the chicken, peppers & onions, a little cheese and some sliced avocado...with Penny's approving eye, of courseJ
A little smoosh in the panini press and it was chow time! Super simple, super healthy & brimming with veggies all minus the extract oils that restaurant tend to 'sneak' into a dish like this. Plus, you also can get great fiber boost from these (Trader Joe's) 140 cal. whole wheat tortilla. (FYI-read your labels! Some of those things are calorie dense AND filled with hydrogenated oils and lard...eeeeek!)
We served our quesadillas with a side of Trader Joe's fat free refried beans, which are just far superior to any otherJ hahahahhaa...so yep: easy, cheap & healthy...can't beat that combo, right??
Hope you guys are having a more cheerful day than Jersey is having todayJ The one bright spot of today is that I was boiling couscous at 6:30am this morning, so we will be all ready to make one of our all time favorite dishes with dinner tonight...with a 'southwest' flair, of courseJ Stay tuned and happy Wednesday!
