Another one off the healthy/quick block...

That title pretty much narrows down this dinner, huh??  It was thrown together in about 20 minutes and is pretty darn healthy if you ask me!
I made a grilled chicken parm...with a little twist....

That twist??

Smokey tomatoes!
I added about a teaspoon of liquid smoke to a can of diced tomatoes & some torn fresh basil....

...and let it all simmer down and concentrate the flavors while the chicken was doin it's thang on the grillJ

When the chicken was cooked, I topped it with the tomatoes & a sprinkle of low fat mozzarella (although I think smoked mozzarella would have been incredible...but alas, low fat was what we had, therefore low fat is what we get for the night!J)
Cover with tin foil and allow the cheese to melt for a few minutes and WALLAH!  Healthy, smokey & super flavorful chicken parm!
The smokey tomatoes and fresh basil is just a KILLER combination...and one that couldn't have been simpler!  How quick was that to throw together?  You couldn't order IN chicken parm that quickly!  Let alone one not dredged through oil.

And to round out this healthy meal....a side of broccoli.  I know, terribly thrilling and all, but we were actually pretty excited since it had been a hot minutes since we had some good broc' as a sideJ
So that about wraps it up for today.  I can't even BELIEVE that it's Thursday already!  This week has FLOWN..albeit, under constant cloud coverage!  For as gorgeous as LAST week was, this week: we are payin for it in rain & humidityJ
