One more step...

Sooo...here was my round up for Monday's Breakfast & Lunch:

For lunch I tried these Roasted Veggie Enchiladas.  They were quite tasty from the mix of corn, spinach, corn tortillas and enchilada sauce, although I think I'm partial to the Black Bean & Corn ones just a littttttle more (probably because I didn't have to pick mushrooms out of that one;)
At least it kept me full all throughout the afternoon and through the gym.  WHICH, by the way, I had to summon every last OUNCE of my willpower to go to last night.  It was sooooo dreary when I left work, the ONLY thing getting me there was knowing that I'd be wandering around Alcatraz the same time next week, so I better get in all the workouts while I can;) hahahahahhaah...

Monday Morning:  30 minutes dance, jogs, weights

Monday Night:  1 hour pilates class

And even though I was HARDCORE craving SOUP last night to go along with the rain day, our salads turned out TOP NOTCH thanks, in part, to a littttle help from some leftovers!
  • Butter Lettuce
  • Shredded Leftover Pot Roast
  • Craisins
  • Scallions
  • Broccoli Slaw
  • A sprinkle of Parmesan cheese
I didn't know how this would work out, but it WAS. DELICIOUS!  And again:  No dressing needed!  Especially with that little extra hit from the Parmesan cheese....YUMMMM!

Soooo since it’s March 1st (yowza!), I thought I'd catch you up on my "get healthier" goals.  I've been doing great with the no (or less) artificial sweeteners & preservatives (Exactly ONE soda in 2 monthsJ).  It's still true that I've been 304,730,597,235 x’s less "crave-y" than I had been for almost ALL of 2010.  But I was thinking about it recently and realized it also might be due to the fact that I've been following the 3 "S" (as I have been calling them since Sunday when I noticed the ‘trend’;) 'S' #1 is that I RARELY let myself get to the "starving" point anymore.  Mainly because, when I'm hungry-I have a snack ('S' #2J). It used to be that I would try to skip those snacks and hold out as long as possible between meals, and then by the time I got home: I was a ravaged animal.  So by the time I sat down to dinner, any "small portion" that I was trying to keep myself to never felt like enough and I constantly felt unsatisfied. (which leads to binging...don't even kid yourself that it doesn't).  So now, I let myself have that snack before I go "over the edge."  I try to keep it to something like fruit, vegetables, cheese, a handful of (sesame) almonds (definitely finding that "carb & protein" combo to be a hunger killer!

And by NOT being starving from snacking, I RARELY let myself get to that horrid 'S' #3: STUFFED.  Because I was able to graze throughout the day, when I sit down to dinner I am able to eat a decent portion (give or take...some days are 'more hungry' than othersJ) and then I'm fine.  Pretty common sense, right???  And yet it was something that took me almost a year of struggling to learn.  Sometimes you just have to take a step back to notice what your doing (or NOT doing) that's going to help you move onto the 'next phase.'  Right now, I'm at the lowest weight I've been in over a year and MUCH more “at peace” with my eating habits than I have been in a LOOONNNNGG time. (all while eating more than I had been...good bonus, right??) I have a goal in mind that I’m working towards and I'll hopefully get to share it with you soonJ (don’t want to jinx myselfJ)

And, like I said yesterday, with our trip to San Fran coming up next week it's going to be the perfect time to use that elusive FOURTH "S": Sharing!J If you share/split food you get to taste more things and feel less stuffed...win/win, right?? J That's my goal for next week!  I'll see how we doJ (now who is going to get that last roasted garlic curly fry??J)
