But what a better meal then to start the week the same way I started last week: With some steel cut oats;)
The interesting thing was that I brought 2 cups of water to a boil and added in only 1/3 cup of dry oats. They took awhile to simmer (maybe 40 minutes or so), but the result was this HUGE bowl of oatmeal! I couldn't even finish it! All of that extra water really filled up the bowl with only the calories from the normal serving of oats. Interesting, right??
And in a "first time ever" incident: I actually forgot to eat lunch between a flurry of 'picture editing' and a 2 hour yoga class this afternoon....which felt AMAZZZING! Especially on my "hill hiking legs" that hadn't been stretched in a week;) hahhahahahaha....
And for dinner, we had our usual "post vacation" dinner...Spaghetti Squash casserole:
And even though this tasted sooo super healthy & fresh, I know this is nothing too exciting;) But just thought I'd check in before I started busting out "the big guns" tomorrow! Here's a preview:
