Scott & I flipped through an entire issue of a certain food magazine we received in the mail the other day in an attempt to pick a new recipe to try out for dinner this week. And what recipe caught our eye?
One from an ad.
AN AD! 30 fresh new recipes to try and yet we were powerless under the swaying influence of the new Philadelphia cooking cream's marketing team;)
But the picture of these gooey & cheesy enchiladas just looked WAY to tempting;)
Hmmmmmm...maybe these will influence YOUR dinner for tonight? :)
The recipe was 1-2-3 and super flavorful from the Sante Fe cream cheese, chicken, onions & diced tomatoes...OLE!
We had our enchiladas with a side of guacamole and some new chips...
I'm a sucker for seeds, so it's no surprise that these found their way into my cart today at TJ's:) Love them except for the 'fennel taste' at the end. Do Hemp seeds taste like fennel?? ;)
And in an attempt to make at 'mexican' side dish that did NOT involve rice, we heated up some black beans with some roasted corn and diced red peppers with a little salt, pepper & cumin. Perfectly sassy and satisfying:)
Along with a couple scoops of garlic ice cream and we called it a night.
*WARNING: So OK, you OFFICIALLY have to be a BIG FAN of garlic to like that ice cream...which we quickly learned when our 'passive garlic fan dinner guest' last night took one bite and almost went running for the hills;) We won back her favor buy serving her a "more friendly" chocolate fudge swirl ice cream as a replacement;) hahahahahahahaha:) Just thought I'd make a note of that cause Scott & I barely noticed the garlic, but I suppose it can overwhelm some;) hahahahaha Just an FYI:)
And after waking up SORE from shoulder to toes yesterday morning, my work out included:
Tuesday Morning: 40 minute Body by Bethenny Yoga
Tuesday Night: BodybyB 10 minute weights x 2, 5 minute booty blast x2
REALLLLLLLY did NOT want to lift those weights last night, but thankfully Tuesday Night = Biggest Loser night and the contestants gave me just enough inspiration to get me off the couch to work out right along with them;) hahahahahahaha....WHATEVER. IT. TAKES! ;)
ANYWAY! Have a great Wednesday:) (Hopefully it's a sunnier day than it is in NJ today!)

Thanks for the review! I've been dying to try it out, but was waiting to hear some reactions! I think once the snow clears up tomorrow I'll get some!
hahahahaha...let me know what you think when you try it;) It DID get stronger the longer it sat;)
