Ever have one of those days where the first sound you hear when you wake up is rain beating on your window and you think "Dear God, please let it be ANY day except MONDAY!!!"
And than it IS Monday.
Thus was life in NJ today;) So pardon my delay in posting, as it has been a slow day to get motivated in ALL things (not even gonna MENTION what time I started my morning work out today...I think I was still 'stretching out' once I got to work;)
Butttt...on the bright side: I have some good weekend eats to show you:) I'm even gonna break up my post into 2 parts, since there were so many good ones! Starting with Saturday nights dinner:
Look familiar??? Yep...it was our attempt to "recreate" the awesome Jim Rome from Ike's! Yes, I know it's been a hot minutes since we got back from San Francisco, but there's no time like the present ("do it now, not later") than to relive some of our foodie "adventures";)
We got a littttttttttle help by bringing home one of Ike's "secret ingredients" : The Dutch Crunch bread...
Isn't it pretty?? We were all ready to try our sandwiches on regular 'ole sourdough, until the very sweet girl taking our order explained that the double crunch is crusty around the edges, but flaky on the top. Sound good, right?? Trust me, it IS!
Next, I got to crackin on an 'attempt' at "Ike's Dirty Sauce." Not sure how I did to compare, but I mixed up some mayo with a quarter teaspoons of both crushed garlic & dijon, with a sprinkle of parsley, salt & pepper. Good, either way:)
Next, we layered up the sandwich with:
- Smoked Gouda
- Bacon
- Avocado
- Onion
- Lettuce
- Red Pesto (made from roasted red peppers, sundried tomatoes, a sprinkle of grated cheese, olive oil & salt and pepper)
Toast the whole thing up to melt the cheese, add a few extra crispy potato chips on the side and wallah...
Monster Chow Time!
It's hard to compare to Ike's, but this was a GOOODDDDDD sandwich!!!! So glad we have ONE MORE Dutch Crunch roll in our freezer for our NEXT experiment! :)
And even though I try my best not to drink soda anymore, I do sometimes really like it with sandwiches (and pizza:), so I thought we could give this ALL NATURAL cola from TJ's a whirl....
I'll deal with the occasional 160 calories rather than downing the 'fake/calorie free' stuff! And it was really good, to boot! :) Can't argue with an ingredients list of pronounceable words:) On the "lesser evil" category, this one scores HIGH MARKS!
And after a successful "recreation," the few days worth of 60-70 degree weather got to us and we celebrated with our FIRST trip to Dairy Queen of the year:)
And even though I REALLLLLLLLLLY didn't think it was going to be enough, the new MINI Blizzard was JUST the perfect size!!! (It's still 370 calories...but that sounds better than 530 for the SMALL, right??)
A perfectly reasonably sized treat, if I do say so myself;)
Resse's Blizzards + Ghost Adventures = Perfect Saturday night for us...even Penny:)
Whichhhhh...bring us to Sunday morning, where we were ready for some PANCAKES!
But no, not just ANY pancakes...as these babies were stuffed with:
THAT'S RIGHT!!! Crumbled BACON!!! :)
And there's no better way to eat bacon pancakes than with some CRUNCHY peanut butter...
Yes, you heard me right! I've ALWAYS loved peanut butter on pancakes, but mixed with the salty bacon & the sweet maple....well, you can only imagine the love of this bite;)
So that's all I got for today:) I'll be back tomorrow with our yummy dinner & "interesting" dessert:) Hope you guys have a GREAT Monday! :)
