Well, we said farewell to 2010 the best way we could: With good food & good friends...
And as usually...we didn't have enough;)
Hahahahaha...I kid, of course:) We had everything from crab dip, spinach artichoke dip, honey mustard chicken fingers, sweet & sour meatballs and sliders...
And my contribution: Champagne risotto topped with crispy prosciutto...
This was sooooooooo good! COMPLETELY rich & decadent which = PERFECT for New Years Eve:)
And speaking of rich & decadent: I made another round of my Eggnog Rum Cake...but this time, I made them in the little house cake molds my friend had got me for Christmas last year:) How cute are these???
The funniest part was that I didn't follow the 'suggested' 1/3 cup of batter to pour into each mold, instead I filled each mold to the top...only to open the oven door to find that the batter had completely poofed up over the pan!
It took Scott's steady hand to trim them into neat houses with NO "basements":) But never fear, they did not go to waste:) I just covered em with rum and called them igloos:) hahahahahhaha....
And in keeping with my 'theme'....I also made Champagne chocolate mousse...
Yow...was this stuff good:) Super rich & luscious...
Even one of our youngest guests was a fan (sans champagne, of course! :)
Here's to a happy & healthy 2010:)
And for our New Years breakfast, we wanted to try out somethin a little special! So we decided to make Curtis Stone's Crepes with Orange Caramel & Mascarpone. Now I had ZERO clue I even knew how to MAKE crepes...but these couldn't have been simpler (made speedier by the fact that I used 2 pans...and NOT a fancy schmancy crepe pan. Just a nonstick skillet worked perfect;)
Some of em came out looking like spiders...(gotta work quick, that batter sets FAST! :)
But I actually managed to get a few that looked like 'proper crepes';)
Once I made my neat little stack, I tossed em all back in the pan to warm up a bit (they cooled QUICKLY!)...
And got our toppings ready...
Mascarpone cheese was a no brainer...its delicious! But we were both a little hesitant on the orange maple syrup situation. Let me tell ya, do NOT skip it! It made these babies EXTRA special:)
Yum...cheese filled crepes with citrus maple syrup...could not have picked a better breakfast to start off 2011:)
And, like I said, after a SWEAT packed Power Yoga class at the gym in the morning, most of my day was spent with my book (that I've been trying to finish since November:) ...
...and Scott watching football:)
And maybe a tired little puppy in my lap:)
And for dinner, we kept it simple with a few of our favorites:)
Usually for New Years we have ham, but after Christmas Eve and a few leftovers: We were Ham-d OUT! :) So we decided to go with one of our classic favorites...Lipton Onion Chicken...
You just mix mayonnaise with a packet of the onion soup mix and spread itover the chicken. A half hour in the oven and you are good to go! This chicken is super moist and soooo flavorful from the onion mix.
We also had some roasted broccolini....(roasted for a half hour with garlic powder and olive oil)
And we did stick with one traditional New Years dish: Twice Baked Potatoes:) We mixed up the potato with cheese, crushed garlic, a little butter & some leftover prosciutto before throwing them back in the oven for 10 times and under the broiler for 5...
Soooo good:) Always a favorite:)
Well, that about wrapped up our New Years holiday:) We have a few more interesting dishes planned for today and then the rest of the day shall be spent watching "Ghost Adventures" and getting ready to get back to the grind tomorrow. All good things must come to an end, unfortunately.
Have a great (and sleepy:) Sunday!

THANK YOU BOTH SOOOOO MUCH!!!! You're both too sweet:)
"I like to Cook" : "Heat" is pretty good. Not my favorite book, but maybe because I haven't found too much time to get really into it:) but it's very interesting..esp. the Mario Batolli parts!
