Well...last night was as nice as could be! I don't even remember the last time I was home on a Friday night, so I was soooo very to happy to just relax and UNWIND after the week! We had a COMPLETELY relaxing Friday night of take-out (even MORE of a rarity!:) and lounging on the chilly sunporch;) All before coming in and catching the aroma of my slow cooker on full blast:) And the smell of spice & cinnamon was all thanks to Sandra Lee's Heirloom Carrot Spoon Cake...
I lightened this recipe up a bit by using:
- Fat Free/Sugar Free Butterscotch Pudding Mix
- Unsweetened Apple Sauce, replacing the 3/4 cup of oil
- 1 cup of Eggbeaters, replacing the 4 whole eggs
- Reduced Fat (I'm sure Fat Free would be fine too...it has a different taste, but the same consistency) Sour Cream
A few swaps that you'll never notice, but will save you tons of calories & fat. Especially since the key of this dish is the warm, "spoon cake" consistency. Plus, you must (MUST) serve this with some light vanilla ice cream...it just melts right into the cake and makes it oh-so-yummy! (ps-that is also Non-Fat Reddi Whip, which I think is JUST as good as the original...and I don't say such things lightly;)
We enjoyed our cake, while settling in to watch Zak, Nick & Aaron do their thang!
Which, I always seem to forget, is not exactly ideal to be the last thing you watch before you turn the lights out to go to sleep;) hahahahahah... I always remember it when I wake up in the middle of the night and think I'm going to hear this nice, subtle little "Hello" that you can hear at the end of this clip (around 8:24)...CREEEEEPY:)
Anyway....from lightened desserts to a not-so-light breakfast;)
We had to hit the hay right after the show cause we were up and at 'em early for a busy bee morning! Since we were up so early, we thought we'd hit "The Pop Shop" for some breakfast. I'm not normally a 'chocolate/too sweet in the early morning' person, but I was CRAVING Chocolate Chip Pancakes for SOME reason...so I got 'em! More accurately CC Pancakes the size of my HEAD, to be exact:
HUGGGEEEEEEE! I only managed about a pancake and a quarter:) Scott now has a whole leftover breakfast for tomorrow morning;) hahahahahhahahahaha
Next, we headed over to the Farmer's Market...where signs of Summer AND Fall we're hanging out side by side:)
In the "Summer" corner: the remaining survivors of the corn truck...
And an abundance of Jersey Fresh Tomatoes! Now's the season to make that fresh gravy, folks!! :)
And, more excitedly for me:), we have fresh apples replacing summer peaches...
And signs of my favorite pick-me-up! :) I told Scott today: "If you want to cheer me up, skip the flowers...just get me a pumpkin" :) They just make me SMILE:)
As did my favorite purchase of the day. I actually let out an AUDIBLE SQUEEEEEEAL when I picked up these:
I already have visions of brown sugar & roasted squash dancing in my head;) Love, Love, Love squash! They are just too pretty and AUTUMNAL!;)
We also managed to stock up our fruit & veggie bins:
And got a few leftover summer staples.... we'll see if corn is officially past it's prime this week!
After the market, I FLEW to "Yoga in the Park" this morning!!! And unlike last week's cloudless sky, I must say: I didn't mind a few clouds blocking the sun;) It made Triangle pose a little more bearable:) After, yoga melted right into more "Pilates in the Park":) I feel stretched and centered:) hahahahahahahhaa....
For our lunch, we decided to use our Market fresh bread to help clean out our lunch meat bin:
And made a panini with (light) provolone, prosciutto, turkey and a sprinkle of fresh rosemary....
I gutted the middle out of the 'lid' of the bread to make it more ready for the ...
SQUISSSSH in the panini press....
And 3 minutes later...we had a nice, hot & melty sandwich...
So goood! Truth be told, by the time you got over to the turkey side, it was sooo bland....solely because the prosciutto just BURST with flavor! Yum!! :)
Well...I'm a little bummed this afternoon, because despite my 2 hours of yoga/pilates this morning, I was SUPPOSE to have a 2 1/2 hour yoga session this afternoon (hence, why I thought Sunday was going to be an immobile one:), but it got cancelled yesterday:( Bummer! Now to decide if I want to tackle some extra exercise on my own...OR just embrace what I've done so far and kick back with "The Kite Runner"....oh decisions, decisions;)
