For anyone new to my blog, in order to strick that "balance" that we try to strive for: Monday night is usually always 'Salad Night' in our house. We figure it's a good "detox" from the weekend and a good way to kick off a healthy week:) We've had a few really great salads recently....but sometimes we just go with the "Make some baked chicken and we'll figure it out from there" salads;) And that was last night....again:) But I did manage to make this one slightly unique...
We have here:
- Diced chicken, coated in whole wheat crackers & baked
- Red Leaf Lettuce
- Shredded Fontina Cheese
- Chopped Onions
- Craisins
- And my star ingredient: Leftover Apple-Lime-Peanut Slaw!
I figured that was a good way to use up the slaw AND coat the salad in the subtle lime/honey dressing...all with dots of those lovely little craisins that I've grown to LOVE, LOVE, LOVE!:) Not too shabby:)
Andddd...since 'Monday night salads' can be a bit repetitive sometimes, I also try to think of some other things to share with you on Tuesday mornings:) Today, I thought I'd share some lunch ideas that I've had lately....starting with today's lunch: Bethenny's "Autumn" Cranberry-Almond Chicken Salad....
I know, I know that the cinnamon in this recipe might scare you...but don't let it! It somehow magically mixed so well with the mayo/mustard dressing and made the flavors POP! Must be that FALL magic in the air;)
I'm having half of the salad on a bed of leftover red leaf lettuce today...and the other half, I may just have on one of these Pita's I picked up at Trader Joe's last week:
I loved that they were smaller than the normal Frisbee-size ones, but BIGGER than those 'mini' deals....all for a no artificial colors or flavors 80 calories! Not too shabby, TJ's :)
I've also been obsessed with apples and Peanut Butter lately. Truth be told, I ate the combo for lunch all throughout the summer....BUT with FALL in season, it is the most appropriate time for:
YUM!!! This peanut butter is sweet and dotted with raisins and swirled with cinnamon;) Love Peanut Butter & Co. (and you'll love to know that my Mom & I lugged about 6 of these jars home on the train from the PB&Co. store in NY one time...only to find them at the "Whole Foods" about a stones throw from my office;) Oh well, it's all part of the fun of NY, I say! :)
And one more LOVE: The new Larabars!!!! I've had both the new Chocolate Chip Cookie Dough & Peanut Butter Chocolate Chip and they are both TOO. DIE. FOR!!!!!!!!! (even if I have YET to find the new "Carrot Cake," which I think will be Scott's new favorite;)
And to round out my lunch, I had it with the new-ish Black Forest Cake Yoplait. I was leery, but it actually was a pretty good flavor, speckled with cherries. Sometimes I'm not a HUGE fan of eating 'straight yogurt' (I normally like to mix in a little granola or something crunchy)...but in order to change the consistency without adding anything extra, sometimes I'll freeze it! It takes MUCH longer to eat that way, and it almost seems like a forbidden treat;) Ice cream in the middle of the day is not a bad thing;) hahahahhahaha....
OK, OK....I'm done now:) Hope that I gave you some new lunch ideas to try!
So can I just tell you....it is absolutely BEAUTIFUL out in Jersey today! Super cool...SUPER CRISP, just PICTURE PERFECT FALL WEATHER! So why-oh-why is the forecast scheduled to be 90 tomorrow?????? You're just settin me up for heartbreak, aren't you weather??? Oh well...at least it's still sun-shiny! Can't complain about that...:)
