Well...our "Welcome to Fall" evening turned out to be a little bit of a bust, since it was in the 80's and HUMID when we went to dinner:( Oh well, we licked our wounds with a little Federici's pizza...
And some ice cream from Applegate Farms...but alas, I had to stick to coconut & graham cracker since pumpkin was not available there yet...nor, was it seasonally appropriate on Friday;(
SATURDAY, HOWEVER, was UBER seasonal...as the temperature had dropped about 10 degrees and THIS was on at my house ALL. DAY. LONG...
Yes kids...it's college football season;) And, being the seasonally appropriate wife that I am;), I figured Saturday called for some "Man Food" in the form of pulled pork, garlic & cheddar spiral potatoes and some zucchini (OK, the zucchini-not so manly, but it was necessary;) hahahahahhaha....
I remember getting a spiral potato recipe in the mail sometime in the mid-80's, yet they STILL make an appearance at our table on all-too-rare occurrences;) For these potatoes, I started out melting a few teaspoons of Smart Balance in a skillet. Once that melted, I added about 4 crushed cloves of garliccccc to toast up...LOVE:)
Scott had thrown the foil wrapped potatoes on the grill for about an hour. Once they were almost done, he took them in and I ATTEMPTED to cut them into neat spirals....'attempted' being the operative word;) Mine got a little mucked up;)...
Next, we topped the potatoes with the garlic butter, a little cheese and a few scallions....
...making sure to get cheese & garlic in all of the layers;)....Don't mess around! ;)
I threw them in the toaster oven long enough to melt the cheese...and WALLAH! Spiral Potatoes with Garlic and Cheese in every bite! Delish! :)
And considering the bottles of BBQ sauce that we had got on our trip to the Middle had been STARING at us SINCE Mid-August...I'm surprised it took us THIS long to crack them open;) But Saturday was the DAY, as we made our Pulled Pork with some Sweet Baby Jane sauce from Pappy's Smokehouse...HEAVEN! :)
And in TRUE BBQ fashion, we threw the pulled pork onto a slice of Texas toast....yum!! SOOOO GOOD!
And, like I said, a little sauteed zucchini to round it out;) Must say...these things are pretty irresistible too;)
So I think Scott DEFINITELY enjoyed his 'first football Saturday';) His plate looked mighty tasty too;)
We went for a picnic at my in-laws yesterday and I have a few "seasonally appropriate" dishes for a small picnic we're having today;) Should be good! I'll fill you in tomorrow....ENJOY THE REST OF THIS GLORIOUS WEEKEND!!!! :)
