...perfect weather just yesterday morning?? hahahahhahaha...well, that lasted right up until I left work yesterday afternoon and heard the thunder rolllllling in. And of course, mid-rush hour, the skies opened and it POURRRRED. As in: The wipers are on TOP SPEED and they STILL aren't quick enough!
Oh well, Jersey is in DESPERATE NEED of rain and it does make for some cozy cooking weather;)
And speaking of cooking, I thought you guys would like this:) So since Penny is a Chocolate Lab, which means she LOVEEEEEEEEEES people. Loves! No, I mean...REALLLLLLLLY LOVES! She's our 70 pound LAP dog...(I'm already worried about Scott's inability to have children due to Penny's DEAD ACCURATE aim in her leaping...hahahahahhaha;) Well, she also loves to stand asclosetoyouaspossible, esp. when one of us is near the sink, counter...or in yesterday's case: Trying to cook tomatoes on the stove....:)
hahahhahaha...she's a little lover;) (and a lover of any dropped "treats," that's for sure;)
SO ANYWAY...that finally brings us to our finished product: Our dinner that nearly cleaned out the rest of our veggie bins from this week's trip to the market...
(And yes, I already have out my Halloweeeen placemats. Don't Judge;)
Scott called this dinner a "True Joint Effort"...starting with Sandra Lee's Cornmeal Crusted Chicken with Smoky Tomatoes. He breaded and cooked the chicken in cornmeal, paprika and some Mrs. Dash....
And I finished up with the tomatoes! I deglazed the pan with 1/2 cup of white wine and let that boil for a few minutes. Then I added 1 can of Diced Tomatoes with Basil, Garlic & Oregano and a teaspoon of the secret ingredient that I don't use NEARLY often enough:
Love that stuff!! You let everything boil together to let the liquid reduce and your good to go! The smoky, tangy tomatoes went great with the subtle & crunchy cornmeal breading on the chicken
Next up, I whipped up our good old "leftovers throw together": Sliced Zucchini, a couple handfuls of sliced cherry tomatoes & the rest of our bland Jersey corn;) So quick, healthy and tasty!
And finally, Scott made some Roasted Potatoes with fresh rosemary. Can't really beat these 'crunchy on the outside, soft on the inside' babies!:)
Yum! This dinner was a good balance of flavors, lots of veggies and a perfect way to salvage all that good produce from going to waste! :)
And for dessert...I had something on my mind that I had spied in THIS book this week:
My Sister-in-law got me this for Christmas last year, and I do believe if Julie can cook her way through Julia Child's cookbook...Donna should cook her way through THIS one, no??? :) It couldn't be MORE appropriate;) hahahahahahahhaa.....
Anyway, how could this one NOT stick with you?? :)
MMMMM.....I was able to let this cool for about 5 minutes before I had to break into the pot:) It made nice little melty pools of hot peanut butter/brown sugar/salty sauce & sweet vanilla ice cream....to DIE for!
Wwwwwwwwwwwwweeeeeeeeeeee....is anyone else OH-SO-HAPPY that it's Friday??? Dumb question, right?? :) hahahahahahaha....tonight is going to involve a slow cooker dessert & some ALL NEW GHOST ADVENTURES! We have been counting down to this for WEEKS! We MAY even be getting some take-out for dinner to celebrate...party animals, I know! ;) Hope you have good plans for your weekend...tomorrow is going to be an INTERESTING one. I may be unable to walk come Sunday, I'll just leave it at that;) hahahahhahaha...
