Well...true to form, yesterday turned out to be a completely cozy day! We started off our day with the fresh Saturday-made treats of Coconut Scones with Coconut Glaze....ummmmm...yum!! :) (Note: The recipe made TWENTY scones. My friend & I halved the recipe and still had 10 HUGE scones...so make sure to share! :) hahahhahaha
They were sooo good because they had a nice, subtle coconut flavor without being sickeningly sweet. Really delicious...Even though we ate them on the sun porch on a SUPER CHILLY morning!!! Thank goodness for HOT COFFEE! :) hahahahaha...Speaking of the sun porch, it's getting QUITE festive, no?? ;)
For lunch, we cracked open this TOTAL impulse buy from Trader Joe's...
6 minutes in the microwave and we were met with this ooey, gooey, cheesy dip....yum! Fun for sharing:)
The rest of the day was spent being partially productive: including laundry, rearranging the dreaded mess known as the bathroom closet annnnnnnnnnnndddddd transitioning my closet from summer dresses and tank tops to all my orange, purples & plaids;)
...And being MOSTLY relaxing! Even Penny was cozy and caught up on some Ghost Adventures with us;)
And for dinner: We went with COMFORT personified! One of our ALL-Time favorite Fall/Winter/Cozy dishes: Cabbage & Straw ....
What's Cabbage & Straw, you ask? Try pasta with potatoes & cabbage in a butter-sage sauce. Ummmm...helllo?????? FABULOUS! Put on your comfy pants and try out this one on the next chilly day!
And the best part, aside from the sauce, EVERYTHING cooks in ONE POT! You add the potatoes for 8 minutes, and then add the pasta & cabbage for another 7. Everything cooks up together with no muss or fuss! Outstanding:)
And the good news is: This was the first of (hopefully) MANY cozy days ahead!!! People can keep summer, I'm a Fall & Winter girl ALL. THE. WAY! :) hahhahahahhahaha....
