Last night's dinner was one of those meal where we just thought EVERY. SINGLE. ITEM was delicious! Even the damn sauteed zucchini! :) hahahahahhahaha...we made "Cubano Pork Chops with Pepper Pickle Relish" (based on this recipe), with the zucchini and some 'pepper corn'...
Scott coated the chops in brown sugar, grill seasoning, allspice, cumin & coriander and got to work on the grill. Meanwhile, I made the 'pepper' relish, by cooking a diced green pepper and diced piquillo peppers in a dry skillet until tender. And even though Scott chickened out...I also threw on a few diced dill pickles....
And all of those flavors just WORKED together so well! The spicy-(er) chops with the mellow peppers and the salty ZING from the pickles = just superb! Believe me...this was a simple one that PACKS a flavor punch...and I know, I know you don't believe me about this pickle business, but just trust me on this one, K??? :) It was dynamite:)
Anddddddd our second 'side dish' of the evening: DELICIOUS CORN ON THE COB! I'm not sure if it was the fact that it was a late season crop of corn OR that I coated it with the water from the pepper jar (This REALLY is the item of the week! Pepper water:)...before it hit the grill...
But Oh MY GOD...DEFINITELY the BEST CORN we've had ALL summer!!!! The water just added a flavorful sweetness that went well with the sweet corn and the kiss of the grill. Delectable:)
Well...I know this was a simple one, but it really was quite delicious!
