Sorry for the delay!

...and you know it's a delay when I'm posting about LAST nights dinner AS I'm getting ready to make TONIGHT'S dinner;) hahahhahahahahah...but never fear, as dinner last night was worth the wait:)  We made Grilled Chicken Breast filled with Fonitna Cheese & Prosciutto with a Sage & Orange Vinaigrette and some marinated red onion couscous salad.  Fancy Shmancy, right?? :)

Scott's never a fan of cooking anything 'in rolls,' because it takes too long for the food to cook all the way through.  So normally, we'll just pound the chicken into thin strips, grill them and TOP them with the filling...in this case:  delicious prosciutto, fontina & sage:)

While the chicken was cooking, I whisked up the vinaigrette in the form of vinegar, olive oil, orange zest, garlic and MORE sage.  (ps-I eventually had to chop up the sage...for whatever reason it would NOT chop up in the processor:)

Next time I think I might add a little of the juice from the orange, or a drop of honey, because I expected the vinaigrette to be sweet to go along with the salty toppings.  It was a bit tangy, but eh-who can complain about anything made with cheese & sage??:) hahahhahaha...

The couscous recipe I based off of a recipe from Trader Joe's...
In the mix, we had:
  • 1 1/2 cups of couscous (Cooked in 1 1/2 cups boiling water, cooled overnight)
  • 1/2 bag of fresh spinach, chopped
  • 1//2 red onion, marinated overnight in balsamic vinegar
  • 1/4 cup basil, chopped
  • Salt & Pepper
  • And 1/2 of a container of my new favorite TJ's find of the past few weeks:
That was a pretty restaurant quality dinner, if I do say so myself!  The chicken was fab and the couscous salad was a nice, new variation on things (although, it still didn't beat our "Southwest Version"! )
