So dinner last night MAGICALLY went from THIS...
To this! ...
We followed this recipe and made "Vegetable Muffuletta" sandwiches. We grilled up some eggplant, zucchini and red & yellow pepper slices and layered them on the scooped out bread and topped them with a slice of provolone cheese....
What, I SUPPOSE, took this from a normal sandwich to a New Orlean's specialty 'Muffuletta' was the addition of some spinach pesto (NOT TO BE SKIPPED!) and a thin layer of pickled vegetable spread created by the blending of this...
The Giardeniera layer gave it ZIP, the pesto gave it a BURST of flavor that couldn't have been rounded out the grill kissed vegetables any better...so good! (now if I ONLY remember the grilled red onion for the NEXT TIME! ;)
Anddddddddd...we finished off our dinner with a sandwich's BFF....

Anddddddddddd....I know it's only been a week since I had chatted about ice cream, but you need to forgive me as I have MORE ice cream to discuss today:) Growing up, the only ice cream I ever remember having was Trenton's own Arctic ice cream. And the gem in their crown of 31 flavors is the Peanut Butter, which is sooooooooooooooooooooo hard to find...
So despite there being an obscene amount of ice cream ALREADY in my freezer...there was NO WAY I wasn't going to POUNCE the second I found this in the freezer section at Risoldi's (the only place I've seen even SELL the elusive Arctic!)
There might as well have been a gallon of GOLD in that freezer aisle...it was THAT exciting:) hahahahahahahha....one of the 'crispest and clean tasting' Peanut Butter ice creams EVER! Not to mention a dash of youthful nostalgia thrown in the mix;) hahahahhahahahahaha

Wohoooooooooo....we have MADE IT TO FRIDAY, FOLKS!!! Hope you get to enjoy what is going to be a GORGEOUS few days! (High 70's/Low 80's!) I'm off to 'usher in the Fall weather' tonight;)
