Seeing Red...

First salads...and now look what was in this month's issue of Food Network Magazine:
As if I didn't ALREADY LOVE Pancakes & Waffles...now I have 50 more reasons too!! :) There were a lot of good ones (German Chocolate Waffles, Bourbon Bacon Pancakes...HELLO???) But I knew exactly which ones I wanted to try first when I saw this:

And they weren't kidding in the RED department:

I could not WAIT to try these...and topped them with the recommended whipped cream cheese....

But guess what...they were kinda disappointing! I don't know if it was the cream cheese, the buttermilk, or that you weren't suppose to use UNsweetened cocoa powder in this recipe, but I thought they were kinda tart & almost bitter. Not really what I was expecting....when what I was hoping for was a dinner that tasted like CAKE! :)

I actually ended up mixing the cream cheese with some confectioners sugar and cool whip to sweeten them up a bit...but they still weren't the greatest. Oh well, they were good portion control, because 2 'cakes were more than enough!! I would definitely use SWEETENED cocoa powder next time...maybe that was our downfall. Sigh....

Oh well....dinner tonight should be a no-fail situation...even though I have no idea where I'm going! I just know that it's in New York and coconut margaritas are involved;) Can't be too bad, right??;) OLE!
