I can't even BEGIN to tell you how good this is...between the sorta-spicy chicken and the cool, avocado dressing...it's just salad HEAVEN! We "lightened" up this recipe a bit by using only 3 strips of the lovely TJ's bacon (adding only 100 calories total). And I also nixed the 1/3 cup of olive oil in the dressing for 2 Tablespoons of fat free Greek Yogurt. It might have been a little thicker than the oil based dressing, but you couldn't taste one ounce of difference once it was mixed in with the lettuce. (FYI: 1/3 cup of olive oil is 630 calories and 71 grams of fat...isn't that INSANE??)
We actually have a slow cooker dinner planned for tomorrow...even though I'm craving all things grilled;) Was it bad that I was walking into Pilates class tonight and totally was craving a good ole American hot dog? Oh well...good thing the salad was awesome;)
