Ooooooooo...last night's dinner was
soooooooooooooooooooooooo good! I can't even! :) We don't usually make a lot of steak/beef dishes in our house...which I believe is just a hold over from the fact that my Grandmother RARELY ever made any when I was growing up. We mainly used to live on soup, pasta and her amazing chicken & potatoes dish that no one could ever replicate! I can't even pick a pot roast out of a line up if you paid me! So anyway, I'm very much a
newbie when it comes to meat dishes (asides from spaghetti & meatballs;)...so I was VERY impressed with this dish even if it was nearly IMPOSSIBLE to screw up!! :) I followed
Kristin's recipe for French Dip and it was incredible!!!!!

I couldn't believe something tasted THAT good and was THAT easy!!! I followed the recipe and threw the 2 pound chuck roast in the slow cooker (at least I
THINK that was the type of meat....you would know better than me, dear readers;). Then a 1/4 cup of balsamic vinegar, 1/2 cup of water and 1 packet of Lipton onion soup mix and let it cook on low for 8 hours. Oh. My. Heavens...it was PERFECT....you didn't even need to shred it. It just kinda fell apart!

And I knew I needed to get the grill involved SOMEHOW last night and thought the first grilled vegetables of the season were the answer! We just "
ribboned" a few zucchini and asparagus, coated them with a little olive oil, salt, pepper and garlic powder and let them grill until
slightly charred. But let's be real: The more charred the BETTER, as far as I'm concerned! ;)

This was an
awesomeeeeeeeeeeeeee dinner! I can see us making this a lot! And are you proud? This was the first time I left my slow cooker on all day and didn't run home at lunch to check on it;) Baby steps! hahahahahahaha....
For Scott's dessert, he had a leftover slice of the
Texas Sheet Cake I made over the
weekend. I have been looking for an excuse to make this for
soooooo long since "
Cooking Light" nominated this as
their "best cake recipe"....and a
chocolate cake lover's birthday this weekend was the perfect excuse to try it out. This was delicious, if I do say so myself!

The frosting on top was
fairly thin so it almost tasted like the cake was covered in a melted chocolate bar.
Ummmmm.....could that even REMOTELY be bad???? It wasn't. I'm drooling.
My dessert was a little on the lighter side. I tried a recipe that I just happened to stumble on on
Tina's blog. Almond Joy "ice cream" that was made with
banana "custard."

I threw in some coconut flour,
unsweetened coconut, vanilla almond milk, cocoa nibs and a few almonds along with the frozen banana and whipped it all up.

I wanted to like this...I really, really did, but it just wasn't
happenin for me. Maybe I used the wrong coconut flour, because it tasted just "sticky" to me. Oh well, still not HORRIBLE, but it was no Texas Sheet Cake;)
It's going to be H.O.T in NJ today! Near 90.....huh??? What happened to 70's, dear spring??? Anyway, today is the first RE-commencement of the "Sassy Salad club" here at work, which I'll discuss later:) Have a great day!!
