Not only did I turn on the air conditioner for a few hours last night....but I just could NOT resist these watermelon slices while I was browsing TJ's. They were just
SCREAMIN at me to take them home... ;)

So I made them a part of our dinner last night! I can. not. wait. for watermelon season! It's just the best:)....

I had actually planned for last night's dinner to revolve around something else...and that something else was this fresh Wildflower Honey I had bought at the Farmer's Market last year.

I had been warned before I bought it that the darker the honey, the stronger the taste. And me, being a honey lover, figured "the darker the better." But the honey man was correct. It has a VERY strong, almost bitter, taste and I'm not crazy over having it "raw". So now I've been on a mission to find recipes to use to cook with it, so then I can buy "lighter" honey when the markets re-open (SOON!!). And first up on deck:
Honey Chicken Skewers

The recipe was literally: Ketchup, Honey and
Worcestershire and took all of 7 seconds to throw together. The sauce, combined with the char from the grill, made for some tasty chicken! Yeah Summer Skewers!
For our side, I did a little take off of the "Grilled Corn Salad" recipe that Cooking Light used. Since it's
DEFINITELY not corn season yet, I used my favorite frozen roasted corn from
TJ's. It adds just that lovely little extra charred flavor to the corn...

And added a diced red pepper, a few scallions, salt, pepper, a drizzle of olive oil...and to round out the meal: A little honey! :) This is the perfect summer side dish! Cool and
refreshing...

Light, healthy and SUMMERY! Just the way I'd be happy to eat for the next 4 months. (That is until September 1st. For that glorious day shall commences "Fall Eats" :) But until then, I have a feeling you'll be seeing a lot of watermelon & fresh veggies on this page!
Although not tonight;) We have a pretty interesting "dinner" planned! Have a good Thursday...almmmooosstttttttt there... ;)
