Pork Tacos with Corn Salsa...

Good Morning!  Well, last night's dinner came together really quick...and I'm STILL really thankful for that because I was STARVING!! :)  I followed the recipe for Pork Tacos with Corn Salsa from "Cooking Light", and as our side dish: Grilled Leeks!

The recipe called for the salsa to be made with jicama and I had all good intentions of trying to find one after work...until I got in my car and all I wanted to do was go home and eat!  So jicama was out for this time, and instead I made a quick "salsa" with corn, black beans, cilantro, cumin, lime juice & onions....

I used the "LaTortilla Factory" wraps.  These are HUGE and only 80 calories!!  If you look at the packaging for most tortillas, they can be well over 200 calories!  So even though these are a little harder to find (and a little more expensive), I think they're totally worth it!  (Plus they freeze really well.  I took out 3 in the morning to defrost for dinner and threw the rest back in the freezer to use at another time.)

I loaded up my tortilla with guacamole (LOVE, LOVE, LOVE!), corn salsa and some shredded pork grilled with cumin, chili powder, oregano & salt and WRAPPED it all up....

And I know they don't look like much, but these grilled leeks were KILLER!  They tasted almost like an onion "ring"...errr...strip, if you can believe that!!  Per directions of a friend (Mr. Uk!), I halved them and drizzled them with olive oil, salt & pepper and that was it!  So easy and sooooo good! 
Simple & delicious...which is perfect when your A.-Starving and B.-Trying to get back out the door! ;)  We're going to have ANOTHER dinner like that tonight....is it the weekend yet???
