It started with one of these new, fangled mini watermelons....
It might be a bit early for watermelon...but this one was SWEET as SUGAR!! Yum!!!...
After I chopped up the watermelon, I got started on our other side dish for the night: Couscous salad. Just look at all the freshness on my counter....lovvveeeee it....
Couscous salad is one of our very, very favorite things to have all summer long! And it's very versatile, you can throw in whatever you have in your fridge. But for this salad, we used:
- A box of whole wheat couscous (cooked in chicken broth & cooled)
- 1 can of kidney beans
- 1 red pepper, diced
- 1 cucumber, diced (I'd leave the skin on)
- 5 shredded carrots
- 1/2 a large red onion
- Salt, pepper, olive oil & red wine vinegar
Just look at it...it looks like confetti! And how, pray tell, can that not be just oh-so-fun??All the while, Scott made our awesome burgers for the evening! We had a package of leftover smoked gouda cheese in our fridge, so we went with an old favorite recipe: Bacon Bits Burger with Gouda and Steakhouse onions..You can't tell from the picture, put under the gouda was a mound of onions sauteed in A1 steak sauce. I can't even tell you how fast you should run to try this. Between the gouda, the onions, and the bacon bits...every bite of this burger is smoky and delicious!!
And seriously, let's give more love to the couscous salad, shall we?? And I'm even more excited for the leftovers...because this just gets better & better the more it sits....
And keeping with my "summer" theme...I cracked this open for dessert last night...
I saw this in the freezer case and questioned buying it...until I saw this....
Pie crust pieces?? Yes, please! :) It was such a good flavor...especially with a dollop of cool whip on top! Then it REALLY tasted like a piece of pie;)
And don't think we were the only ones to get a treat for the evening! You may remember about a month ago, when I selfishly "stole" one of Penny's good empty peanut butter jars to use for my breakfast....
Well...I finally made it up to her. Here she is chowin down on the rest of the peanut butter (from a PLASTIC jar;)Overall, a delicious evening for ALL involved! (Penny's laying next to me and just let out the LARGEST Sighhhhh...so I think she is agreeing with me;) hahahahahahahha...
