No Self-respecting Southerner...

Well, last night was night two for leftovers...although none of them involved homemade cheese:) We had leftover ham from our early "Easter" dinner at my in-law's house this weekend. Not only does my Father-in-law make a great cake, but he also cooks a mean ham! ....
And for whatever reason, every time we have leftover ham, our "go to" side dish always seems to be cheese grits...
Now if I've learned anything from the movie "My Cousin Vinny" it's that "No self-respecting Southerner uses instant grits." But being I'm from NJ, nor am I in a Joe Pesci movie, I find these instant grits to be quite Yum:) Toss in some shredded colby cheese and garlic powder and you are good to go;)
I also found a bag of frozen artichokes in our freezer, so I mixed them with a little olive oil, salt, pepper, garlic powder and Parmesan cheese and roasted them for about 20 minutes. Quick & Simple, which is always good for a Wednesday:)

So since that's 2 days in a row of "leftovers chatter," I thought I'd share my workout update of the week. So you may remember last week how I JOKED that the Jillian Michael's Yoga Meltdown Level 2 might include something like this...
Well...guess what...it did! That was the FINAL move of the workout:) hahahahahaha....To be quite honest, it wasn't NEARLY as impossible as I thought it was going to be and I was pretty proud that I held my own against the big, bad, scary yoga DVD;) (don't often see those words in a row, huh?)

So, while I was riding on my Jillian "high," I figured this morning might be a good time to break out this DVD that I've done a few times and almost had to be air lifted out of my house:

Yoga Level 2, this is NOT:) I held my own a LITTLE better than the last time I tried this out, but I am STILL way too scared to go beyond Level ONE just yet! I can feel my shoulders tightening just as I sit here and type this. Yow! Now, the plus side of this DVD is that it's only 20 minutes. Now I'm not saying those 20 minutes don't feel like an ETERNITY while your doing them, but I can mentally get myself through a workout a lot better if I can see the light at the end of the tunnel swiftly heading in my direction. I'd almost love to try this out for 30 days straight just to see what I'd look like at the end of it...but I like switching things up every day a little too much:) We'll see how I'm feeling about that thought tomorrow morning;) hahahahahhaahhaa....

I give you so much credit with these DVDs! I should be downstairs right now doing Bob's Yoga but I just can't stop being lazy. Where do you find the motivation? It's just so easy to talk myself out of exercise :)

Thanks Kim!! Honesly, if I didn't work out first thing in the morning, I'd have a really hard time with it! It's the only way I'm able to do it without having any excuse. If I wait it out for later in the day, I'll find 1,000 reasons not too:)
