A milestone 1 year + 6 months in the making ;)

Wednesday Recap:

8:00:  PUMPKIN Coffee with PUMPKIN SPICE CREAMER!!  (weeeeeeeeeeee!)
Yes, I TRY to eat as natural/anti-hydrogenated oils as much as I can, but flavored creamers: I just heart thee too much!  It's my guilty pleasure, I ain't gonna lieJ

9:00am:  Breakfast- Apple with Almond Butter

10:30-11:45am:  Power Yoga class
Always so funJ

12:30pm:  Lunch- Strawberry Cake Batter Protein Shake 
Well, I can't say this was quite as delicious as my CHERRY CAKE BATTER SMOOTHIE, but it was still creamy & dreamy none the less. (And let's be honest, strawberries are a littttttle cheaper than cherries, amIright??)  I made the exact same recipe just swapping the cherries for 5 strawberries.

3:00pm:  Snack- Wheat toast with butter & flaxseeds
Mixed with a few remnants of my dinner prep in that pictureJ

As soon as Scott got home, we packed up everyone and headed out because it was JUST. TOO. GORGEOUS not to enjoy a walk in the park...

...where Katie took part in her latest favorite game called "Help Daddy walk Penny."  The more Penny whips her around, the harder she laughsJ


If you want a place to try kale as a replacement for lettuce, THIS is your salad.  Especially if you can find lacinato (or DINOSAUR) kale at your market.  The leaves are tender and needs a little less "prep" to mellow them out. 
That being said, after I thought about it, kale fell right into the category of having to try foods a few times before you realize you like them.  The only way I used to be able to eat kale was if it was SUPPPPERRRR boiled down or as chips.  Now the raw stuff doesn't even faze me.  Do you guys have any foods like that??  Others I can think of off the top of my head are goat cheese, feta, quinoa, avocados, wheat pasta & brussel sprouts.  Although I STILL can't get on board with eggs, mushrooms, raw tomatoes or tofu (tastes a lot like eggs, IMO!)  Maybe one dayJ

For now, I'll just house this salad filled with brussel sprouts, craisins, almonds, bacon (FINALLY used that extra bacon I prepped and kept in the fridge!) Parmesan cheese, caramelized shallots (I used 3 but I could have used 30!  They are SOOO GOOD!) and that yummy maple almond vinaigrette...

And Scott & I weren't the only ones to house the salad... 
As proud & happy as I was to share one of my homemade pumpkin cookies with Katie, I'm pretty sure it pales in comparison to the pride of watching her SHOVEL IN handfuls of KALE! 
I'd say the first official salad night that Katie's partook in was a success! (I used to just dice up the ingredients we used as toppers and skipped the lettuce for her)

5:30-6:30pm:  Body Jam class
I danced till I just about DROPPED last night!  I was B-E-A-T after this class!  Thankfully my teacher is a spark plug who can keep ya goin even when you're about to pass outJ

8:00pm:  Dessert- Handful of white cheddar Pop Corners 

WEIGHT LOSS UPDATE! 
Well, even though this announcement is coming about 6 months+ longer than I really WANTED to tell it, but here goes:  I FINALLY LOST ALL THE "KATIE WEIGHT!"  Yay!  I had REALLY wanted to nail it by her first birthday (especially after doing so well at the beginning of the year), but the frustration of loosing & gaining the same 5 pounds for the last 6 months (ironically as soon as I added 2 extra hours of cardio into my schedule) pushed back my initial goal.  But ya know what...that doesn't matter cause I STILL GOT THERE, and that's all that matters at the end of the day!
I only VERY recently realized my "extra 6 months journey" was probably due to the fact that Scott & I were treating ourselves maybe oneeee too many times on the weekends (usually with the added "excuse" of celebrating another week of surviving parentingYou know how that goesJ)  We often would go to restaurants and say "Well, how often do we go to That's Amore or Hoffman's?"  and go all out.  Only problem?  We are VERY fortunate that the next weekend, we'd usually be somewhere ELSE and go all out there as wellJ  Well, that adds up, even when you try to cut back during the week!  So lately I've been trying to be more conscious on the weekends and have what I REALLY WANT & eat it in moderate portions....or sub for something healthier when I'm not necessarily craving the burger & fries and just getting it for the sake of "well, how often do we get to such & such place," ya know?  Usually it's just a matter of REMINDING MYSELF and taking a moment to THINK that gives me that reminder to stay conscious!  And by being a little more conscious on the weekends and cutting back my portions just a hairrrr bit more (swapping to the salad plates),  I've finally been able to shed those last straggling pounds and even going 1 pound under for good measure! (I nearly fainted of joy on the scale this morning!)  But I also continue to write this blog to show you that you CAN still have butter cake, mac & cheese, wine & cheese parties, cheese fries, (emphasis on CHEESE, obviously!J) pumpkin cookies and STILL loose weight and live a healthy life style.  As I always say:  It's all in the balance!
