One too many times...

Wednesday Recap:

8:00am: Coffee with creamer & 1/2 teaspoon unsweetened cocoa powder

9:00am:  Breakfast- The return of PROTEIN PANCAKES with 1 tablespoon peanut butter & a drizzle of syrup
  • 2 eggs (or egg whites)
  • 1/3 cup oatmeal
  • 1/3 cup part skim ricotta (or cottage cheese)
  • 1/2 teaspoon sugar
  • 1 teaspoon vanilla
  • cinnamon
I ended up using whole eggs making this recipe (instead of just the whites) and was amazed at how HUGE & FLUFFY they came out.  I even added a little extra oats & ricotta to the recipe (keeping everything else the same) and was able to make 2 pancakes for Katie as well.  I think I'd rather have 2 eggs divided amongst 4 FLUFFY pancakes than 2 egg whites divided amongst 2 THIN cakes.  Personal choice...just a ponderment in 'spreading around' the 'decadent' ingredients (and I DO use that term EXTREMELY lightly when discussing something as ridiculously simple as a WHOLE EGG!)

10:30-11:45:  Power Yoga class
I walked IN the class and said out loud "It's already hot in here!"  I think EVERYONE was drenched by the time class was over.  At one point in triangle pose I actually HEARD sweat dripping off of me and onto the mat.  SUPER ATTRACTIVE to say the leastJ

1:00pm:  Lunch- Peach Smoothie
  • 1 cup unsweetened almond milk
  • Pineapple Chobani
  • 1 peach (pitted)
  • 1 scoop protein powder
  • 4-5 ice cubes
I'd be lying if I said this was my FAVORITESMOOTHIEEVER, but it served its purpose as something COOL and filled with protein after that crazy class.  Oh yeah...and used up one of the last of the peaches in my fruit bin.  It was, however, Katie approvedJ

3:30pm:  Snack- Healthier cinnamon toast

5:00pm:  Dinner- "Nacho Peppers" 

Just as yummy as last time...here's my sorta kinda nacho flowerJ 

5:30-6:30pm:  Body Jam class
Probably my FAVORITE routine ever last night...although there's always ONE move in each routine where you do a couple times too many, and in this routine it's JUMP SQUATS!  EI YI YI!  ExhaustingJ

Well, I didn't get any Fall decorating done yesterday...but I did give most of the downstairs a good scrubbin in preparation for the pumpkinsJ  They deserve such reverence, don't ya think??
