Hey everyone! Hope you guys had a great weekend! Ours was super fun and SUPER busy...but alllll was right in the world when I woke up on Saturday morning and it was completely & totally appropriate to have a warm bowl of oatmeal (topped with peanut butter), decked out in a sweatshirt & flannel PJ pants....
...in other words: It was CHILLY this weekend! AND I LOVED EVERY SECOND!
But let me back up a sec and show you a few good, homemade eats that were whipped up in between the wild weekend. Friday night found us firing up the grill for something we haven't had in WAY too long: GRILLED PIZZA!
All you need to do is roll out the dough, drizzle with a little olive oil for good measure and pop on the grill. Once the underside is done, you're able to pull it off the grates with no problems. And once one side is cooked (and burnt & bubbled...my favoriteJ), you can top the cook side with your toppings.
For our toppings, I took about 15 of the ZILLION long, sweet peppers I got from the farmer's market...
...lopped off the tops, pulled out the seeds, diced them into big chunks and tossed em (along with a couple garlic cloves) into the food processor.
Oh yeah, and crossed my fingers...because I was not sure how this was gonna turn out!
Thankfully, my food processor took care of the peppers just the way I had hoped and ground them up into a pepper & garlic 'sauce.'
I added it right to the top of the pizza...
Along with the "pepper sauce," I topped the pie with some mozzarella & diced onions and threw it back on the grill until the underside was cooked & the cheese was melted. (only about 5 minutes or so)
The pepper sauce made the pizza EXTRA flavorful, especially mixed with all the goodness of gooey cheese and the crisped char and the onions cooked JUST enough to mellow them out...delicious!J
Saturday night brought the return of "Football Food" to our house, along with our annual "Football/Fall night" where my best friend & I play good housewives, cook up our men some good eats and spend the rest of the night whipping up FALL treats while the men watch football all nightJ
And in true "man food" fashion, we threw together a "Cheeseburger Casserole" filled with diced pickles, ketchup, mustard, onions & topped with un-rolled crescent rolls. How could this ever be bad??
Oh yeah...and tots, cause we're wild like that!
For dessert, we threw together a pumpkin pie creme brulee complete with a pecan & Ritz cracker crust....
It was really good...but the only problem? We completely forgot creme brulee is actually supposed to be COLD with the crisp sugar on topJ We didn't get to make the brulee until around 7 o'clock, so we didn't exactly have hours (or the desire!) to let it cool for the required 6 hours....so it was more warm pudding than solid custardJ Oh well...there were no leftovers, so I think that means we all survived itJ
We also made a batch of pumpkin muffins, topped with struesel...
...and filled with a cream cheese center!
Oh man, these things were absolutely PERFECT! SUPER MOISTJ, laced with spice and filled with a creamy center.
Make these the next time a FALL jacket...
...and slippers are required for your cozy morningJ
The rest of the weekend was spent running here and there to my two cousin's 1st birthday parties! Katie partied hearty all weekendJ
Well, we get one more day of GORGEOUS FALL weather before a mini-heat wave is suppose to sweep through NJ. Guess who's NOT HAPPY. Oh well...at least it's suppose to cool off by Friday...where a QUINTESSENTIAL FALL activity is suppose to commence.
