Monday Recap:
8:00am: Coffee with creamer
10:30am: Breakfast- Flax pancake with almond butter & syrup
ps-I pretty much nix all the 'added sugars' in both the flaxseed AND protein pancakes anymore. You don't really notice the difference without it and the syrup is enough sweetness for me.
1:00pm: Lunch- Strawberry Coconut smoothie
- Blended coconut yogurt
- 5-6 strawberries
- 1 scoop protein powder
- drop of coconut extract
- 4 ice cubes
3:00pm: Snack- 6 chocolate covered almonds
I barely could contain myself from not sneaking one before snapping this pictureJ These thing are sweet, salty & protein all in one. Perfect snack.
5:30pm: Dinner- Caprese bake & salad
It had been far, FAR too long since I've made this dinner. It is one of THE quickest/no recipe things to makeJ I whipped it up while I was on the phone and not even really paying attention to what I was doingJ Not to mention it's a family favorite all aroundJ Oddly enough, I think the only thing Katie left was the cheese...??? So strange.
For the salads, I had purchased this salad dressing last week. It's 60 calories & 5 grams of fat for 2 tablespoons vs. 150 calories & 14 grams of fat in standard blue cheese...
We had tried it on Saturday night and in all honesty, it was a little mind over matter since I thought it was a little tangy from the yogurt, but by last night I hardly noticed. YET ANOTHER "have to try something a few times (or at least twice) before you like it" exampleJ
6:30-7:45pm: Beginners Power Yoga
Had to realllllly 'listen to my body' last night since my dumbass totally 'overdid' a yoga pose in class on Friday and managed to feel a pop in my knee that resonated from my foot to my hip. Yip. E. Thankfully, it felt a lot better last night than it did on Saturday morning when I thought it was going to potentially be a looooonnnngggg process, but I had to be a LOT more cautious last night. Considering yoga is ALL about BEING IN THE MOMENT and how you feel RIGHT NOW vs. how you felt yesterday, I realized I could do all the headstands and crow push-ups I want, but that rookie mistake of OVERDOING totally put me in "INFANT YOGA STATUS." So much to learn...every damn day!J
8:00pm: Dessert- Vanilla Pudding
Yup, it's totally grade school snack around hereJ And yes, I'm aware they make 40 calorie fat free/sugar free pudding cups...but unlike the above mentioned salad dressing, here's a good example of where those extra 40-60 calories for a regular pudding cup are SO worth it to me. I'd rather have a little bit more and feel SATISFIED by dessert, rather than something lower cal that doesn't taste as good and just FEELS like a 'diet.' And if my experience has shown me anything, it's if you feel too restricted and like you're 'on a diet,' your eventually going to go 'off your diet' and go overboard. DAILY little treats that are satisfying are what helps keep me on the straight & narrowJ hehehehe
OK...that was a LOT of discussion about a PUDDING CUPJ hehehehehe....
I digress.
So let's talk about the fact that I'm in fuzzy socks, sweatshirt & flannel pants because it is COLD up in the joint! I can't even believe how FAST it turned REAL FALL around here this year. We gotta get our annual apple pickin on the agenda here and SOON! I'm so excited to see what Katie's going to think THIS year since she was pretty itty bitty our last time aroundJ
