Wednesday Recap:
8:00am: Coffee with creamer
9:30am: Breakfast- Protein Pancakes with peanut butter & syrup
10:30-11:45am: Power Yoga
Surprised myself by balancing a side eagle arm balance yesterday. Although 99% of the arm balances were done the first time out of sheer "ehh...let me try it" without actually believing it would 'work.' Some take longer to get then others, but usually you'll be surprised what you can do if you just try it out.Do I sound like an after school special??
I digress.
1:00pm: Lunch- Cake Batter Protein Shake
OK...let's be honest: The real reason I had this for lunch? An excuse to use my new CANDY CORN sprinkles! Weeeeeeeee!
3:00pm: Snack- Cheese Nibblers
I had picked up these packs of cheese bites in sour cream & onion and Smoky BBQ for $1 each at the grocery store last week and they run about 150-170 calories a pouch.
But just a little of each flavor is just about enough for a snack.
Besides, I like variety and getting to have a little of EACH flavorJ
5:30-6:30pm: Body Jam Class
D.R.E.A.M routine last night = SO FUN!
7:00pm: Dinner- Roasted Tomato & Onion Soup
Yes, we are going tomato CRAZY this week since the season will quickly be winding down. I had to have at least ONE good reason to buy these pretty zebra's again...
I simply sliced off the 'core,' gave em a quick squeeze to get rid of the seeds and laid em out on a cookie sheet (along with a sliced onion & a garlic bundle to roast) drizzled with olive oil & sea salt to bake at 400 for 40 minutes.
Once everything was done, I tossed everything in the food processor (or blender) and pulsed until fairly smooth... (and yes, the roasting DOES shrink everything down!)...
Add 3-4 cups chicken broth and 1 can of drained white beans and let it simmer for about 20 minutes. Once it was done, I added a handful of torn fresh basil and WALLAH! SOUP!
This soup was UBER flavorful from all the roasted vegetable, filling from the beans and a hint of SUPER fresh taste from the basil. Soooooo good for the soul!
