Grilling makes everything better...

Morning everyone!  How are you guys??  It's a dark & stormy day in Jersey.  The kinda day where you wake up and it's so dark you SWEAR it must still be the middle of the night...and then, alas, your alarm clock tells you otherwise.  Hopefully it ACTUALLY thunderstorms at some point today, as it's threatened to do all week.  This humidity has GOTS to break...for all that is holy hell-fire hair!

Anyways...so Wednesdays always seem to get away from me and I have 2 days worth of eats to catch you guys up on.  But fortunately that's not TOO hard, seeing as I've had the same breakfast & lunch the last 2 days...hehehehehehe...

Tuesday/Wednesday Recap:

8:00am:  Coffee with creamer & cinnamon (still obsessedJ)

9:30am:  Breakfast- Toast with peanut butter

12:30pm:  Blueberry blue smoothie
  • 1 cup unsweetened coconut milk
  • 100 calorie strawberry Greek yogurt
  • 1 scoop vanilla protein powder
  • 1/2 cup blueberries
  • 2 teaspoons chia seeds
  • 4 ice cubes
This one straight up tasted like a berry milkshake.  Why, oh WHY, has it taken me so long to add blueberries to smoothies???  They are just SO GOOD and SUPER good for you!

2:30pm:  Snack- Cinnamon Life cereal  (yup...BOTH daysJ)

Dinner-Tuesday:  BBQ Chicken Quesadillas
This recipe has been on my 'must try list' since Kristin said her husband requests it nearly every  weekJ  That's a rave, no??

I caramelized some onions & added shredded chicken... 

...and then mixed it all together with some BBQ sauce.  I thought this onion version would tie everything together really well... 

Pile the chicken/onion mix on a tortilla, top with shredded cheese and pop in the griddler (or in a frying pan on the stove) 

And wallah!  Melty, cheesy and the sweet kick of caramelized onions just CAN'T be beat!  These will definitely be in our rotation from here on out.

Dinner Wednesday- Roasted salad with Guacamole dressing
I wanted something quick & light for dinner last night since I knew I was going to be running to Body Jam class RIGHT after.  And after taking a survey of everything in our fridge, salad was the easiest & most obvious answer....but one with a little twistJ

I took a head of pre-washed romaine lettuce & sliced it in half...

Then brushed it with a little olive oil & salt and put it on the grill for a few minutes to char.  Ever try grilled lettuce?   It's delicious!  But really, what DOESN'T the grill make better??  (speaking of, I also threw a red pepper on there for good measureJ)

While everything was grilling, I also tossed a drained can of chickpeas on the stove to toast up for some protein.... 

And I also whirled up a quick guacamole dressing... 
  • 1 avocado
  • 1/2 cup non-fat Greek yogurt
  • Juice of 1/2 a lime
  • salt & pepper to taste
This is a pretty thick dressing, so just add some more lime juice if you want to thin it out without adding any fat.

I finished off the salad with:
  • Grilled lettuce
  • Roasted red peppers
  • Carrots
  • Broccoli slaw
  • Toasted chickpeas
  • Diced purple onions
  • Guacamole dressing
  • Cotija cheese 

Light, refreshing and lots of textures of crunchy veggies & smooooth chickpeas, this was a perfect light summer night dinner.

Workouts-
Tuesday:  Advanced Pilates
Wednesday:  Power Yoga + Body Jam

That wraps it up for me.  Hang in there, guys.  The weekend is almost here!  It's been a doozy of a week for us with Scott working very late nearly every day and some other craziness.  I'm READY for it to be Friday night alreadyJ
