Hey everyone! How are you guys this Monday? Just GREAT, I'm sureJ Mondays after a long-weekend always seem to be EXTRA 'fun,' although I hope you guys got to rest and recharge a bit.
We certainly did, as it was TOO. DAMN. HOT to do hardly ANYTHING this weekend. Not even to the make a trip to the farmer's market, and you KNOW that's seriousJ In the words of Scott, who normally works outside all week: "If I don't have to go out, I don't want to!" And I gladly hunkered down in the air conditioning right along with him, only emerging for some boxing class on Sunday morning (brutal) and dinner + a movie on Saturday night, as a movie was the only "COOL" activity we could think about! Even eating ICE CREAM outside seemed none too appealing. Movies was our fall back all weekend and caught up on:
Friday:
Good...although I may or may not have nodding off frequently...possibly after Channing Tatum was no longer 'prevelant.' Did I say that? NahJ
Saturday:
After a failed attempt to go see World War Z (apparently everyone ELSE thought movies were a good idea tooJ), we ended up seeing "This is the end" and thought it was HILARIOUS. Not to mention, neither of us can ever get enough of Danny McBride! He's SO funny.
Sunday:
This had only been sitting on our counter from Netflicks for the last month and I had REALLY wanted to watch it, but knew I had to be in the 'mood' for an epic Tarantino gore feast. I gave myself 10 minutes to decide if I really wanted to watch it and after only about 3, I was completely sucked in. It was one part INTENSE, brutal and VERY hard to watch at times and one part absolutely magnificent. Tarantino's movies are visual GORGEOUS in the midst of the UGLIEST of situations and his screenplays make it IMPOSSIBLE for the actors to give anything but the most dynamic performances. I HIGHLY recommend this one...but don't say I didn't warn you about the parts that make your stomach churn and your hands fly in front of your eyes. There are plenty!
PHEW! Sorry...had to fulfill my 'film student' chatter thereJ But I guess I should head back to the eats, right??
Sunday morning I woke up bright & early to make the doughnuts....or in this case: the morning rollsJ...
And by 'rolls,' I mean butter-drenched...
...and coconut-filled...
Ooey-gooey & SUPREMELY decadent, these lovely rolls were layer upon layer of coconut & almond deliciousness! And yet they somehow didn't feel heavy or weigh you down. They were just heavenly.
(ps-I added a little almond meal to the dough as a flour replacement to bump up the almond flavor even MORE. Hence, the speckles in the rolled out dough)
And after my above-mentioned BRUTAL boxing class (we had a sub who seemed to LOVE 30 second punching flurries mixed with 30 seconds of jumping lunges/burpees/dynamic squats/jumping jacks = IN.SAN.ITY! Although I drew the line when she made everyone run OUTSIDE. Nope-not happening!) mixed with the temperature still hovering in the high 90's, I was ready for a COOOOOOOL treat when I got home:
In the mix:
- Toasted coconut yogurt
- 1 banana
- 1 cup unsweetened coconut milk
- 1/2 tablespooon flaxseed
- 1 scoop protein powder
- 4 ice cubes
And for dinner, I knew I wanted to use up a bunch of produce we had laying around before going to stock up on some fresh beauties today.
On your left there, we have some Bacon-laced onion smothered chicken (I SWEAR there's chicken in there!!)
I started by crisping up 3 lean strips of bacon in a frying pan, and then setting those off on a paper towel to drain...
Next, I diced up this beautiful bunch of spring onions...
And let them cook low & slow on medium-low heat for about 20 minutes (stirring occasionally) to soften and caramelize...
Once the chicken, coated in Montreal steak seasoning, was grilled and cooked through, I crumbled the bacon into the onions, piled em up on top of the chicken and sprinkled it with Cotija cheese...
(Cotija is a soft white Mexican cheese with the texture of feta that gives a great mellow, salty bite...plus it was on sale this week at the Acme, so I picked some upJ)
We LOVED the mix of sweet onions, creamy cheese and hidden bites of crisp & salty bacon laced through there. It was as delicious as it was easy.
Once everything was cool enough to handle, I thinly diced the zucchini & sliced off the corn and mixed with:
- Juice of 1 lime
- drizzle of olive oil
- 2 tablespoons crumbed cotija
- salt & pepper
- 1/4 diced basil
Call it my Mexican side (lime & cotija) with an Italian twist (basil), this was perfectly summer-appropriate with the fresh produce, grill kiss & COOL trip to the fridge. You can customize this any way you like, this just happened to be everything I had on hand and it was great.
Well, that wraps up my movie & Sunday review, as well as the holiday-weekend...which I was VERY sad to see end, as Scott had to head back out into the HEAT today, BLEH! Hope you guys stay cool and enjoy your Monday, well, as much as you canJ
