Bustin out the big spoon!

Monday Recap:

8:00am:  Coffee with creamer & cinnamon

9:30am:  Breakfast- Banana Coconut smoothie   (+ flax seeds & - protein powder)

12:30pm:  Lunch- Toast with Peanut Butter + Pop Corners   (+ another handful or so from that pic!)


4:00pm:  Snack- Cinnamon Life Cereal
Knew I was going to be WAY too hungry by dinnertime, so I used this to curb my hunger a bit.  Plus, I was just plain DYING for a bowl! J


5:30pm:  Dinner- Parmesan Pork Chops, Peas and....

So I knew I was in the mood for just a simple pork chop coated in a bread crumb/Parmesan cheese mix and seared into crisp perfection.  And I knew we were going to have peas because, well, I never made it to the grocery store yesterday and peas is always our fallbackJ 

And I also knew the MAIN STAR of the show was going to be our new side dish for the evening:  PESTO COUSCOUS SALAD!!! 
Couscous salad is one of our absolute summer favorites, especially Scott.  And Scott ALSO loves himself some pesto, like WOAH.  So I thought why not combine the 2???

PESTO COUSCOUS SALAD
  • 1 cup chicken or veggie broth
  • 1 cup couscous
  • Pesto
  • grated cheese


  1.  Bring broth to boil in a small saucepan.  Add couscous, cover pan and remove from heat.  Let couscous sit for 5 minutes to absorb broth, fluff with fork and toss in the refrigerator to cool.
  2. Once the couscous is cool, toss with pesto (store bought or homemade) and add another sprinkle of grated cheese and enough salt & pepper to taste.

So easy and sooooooooooooooooo good!  As you can see, I even had to bust out the BIG SPOON for serving!  Scott said we may have a new favorite couscous salad on our handsJ

Katie also inhaled her whole little bowl (along with some peas) and apparently found the word 'couscous' to be very funny.  I think she believed I was also speaking 'Katie-language' (aka-babbles) because every time I said it, she would respond back with her own words & ramblesJ
