Fresh Herbs #3...

So how have we gone through nearly a week's worth of meals and still only put a dent in our herb stash??  Yeesh!

ANYWAYSSSSSS...on tap for last night, this....

...turned into this!

We started with a couple of butterflied chicken breasts.  I drizzled them with olive oil and pressed on the diced dill & chives along with some salt & pepper.  We popped them into the oven for about a half hour on 350...butttt not before stuffing them with....

...Scallion goat cheese!!!!  SOOOOOOOO GOOD!  I just added some diced scallions in my little blender with some goat cheese, gave it a whirl and smeared it on the chicken.

Soooooooooo good!  The herby chicken with the hint of tangy scallion goat cheese = awesome!  I especially loved the "crisped" parts of the cheeseJ  SO EASY and sooo delicious!

And on the side:  More herbs!!!  I took some cooled whole wheat orzo and added more dill, chives & scallions along with some olive oil, juice from 1 lemon, salt, pepper & a can of chickpeas....
It was sooo refreshing and light!  Perfect side dish for summer!

And finally, some sauteed peppersJ   I know...try to contain your excitementJ
The whole dinner just felt sooo light & summery.  You MUST make this one ASAP!  You'll LOVE it, I promise!

And speaking of light and summery, my breakfast fit the bill pretty well tooJ  Last night I mixed up a cup of Stonyfield 0% Strawberry yogurt along with a cup of unsweetened vanilla almond milk, 1 cup of old fashioned oats and some vanilla.  Give it a swirl and stick it in the fridge overnight....
The oats soak up all the liquids and make for a creamy & chewy breakfast in the morning.  Easy, right??

I layered up a 1/4 cup of oats, then some fruit (in this case, leftover strawberry & mango mix) top it off with another 1/4 cup of oats and you are good to go!  This kept me full alllll morning.
And after that..last night I was baking up a storm!  Amanda from the GORGEOUS blog Our Italian Kitchen had asked me to join her and fellow bloggers for the Share Our Strength Bake Sale to end childhood hunger.  If anyone is close to North Jersey on Saturday, PLEASE stop by Heaven Hill Farm & Garden Center in Vernon, NJ from 10am-4pm to help support a great cause!!!!  There will be bananana breaddddd....just sayin!

Love all these! I absolutely love dill and chicken, it is one of my favorite flavor combination.
