Well, after a Sunday breakfast out on the town AND another round of 'jab, hook, upper cut!' at the gym, I once again came home from boxing and was not in an eating mood (this class is a miracle!!! :), so when I finally decided it was time to chow: I again reached for a dark chocolate Carnation Instant Breakfast and some trail mix:
THAT is exactly 1/4 cup:)
And I cleverly ate all the almond, cashews and raisins first and saved allllll my mini peanut butter cups for the big "finale" :) Amazing how much peanut butter is packed in those mini cups;)
After my snack lunch, the rest of the day was spent on errands (a weeks worth of groceries for $21.18! Boo-yah!)
And some outside AND inside house work (oooohhhh...I can't wait to have the "after" pictures to go with these "before" ones;)
And while Scott kept busy working away, I got busy on dinner! And it was one we had been eager to try for a while! RICE BALL CASSEROLE!!!!!!!!
I lovvvvvvvvvve me some rice balls, but the deep fried carbs don't exactly love the rest of us, ya know? So after spying this dish on Gina's website, I knew we HADDDDDD to try it out!
One layer was a mixture of ground turkey, (leftover) gravy, frozen peas and an onion...
...oh! and 2 crumbled sausage links:)
The next layer was rice, grated cheese, eggbeaters & more gravy...
Finally, you spritz a 9x13 pan with cooking spray and coat it with breadcrumbs (I think I would add a little more crumbs next time)
Next was a layer of rice...
Then on goes the meat & peas....
And lastly some mozzarella, the rest of the rice, a sprinkle of more bread crumbs, gravy and mozzarella...
30 minutes later and we had a healthier version of those deep fried darlings! You got all of the flavors and great layers with at least HALF of the fat as the original! Not too shabby, right??
And as a side: the rest of the monster bag of garlic green beans:)
This was sooooooo good! Warm, cheesy, cozy and comforting...without that 'heavy in the pit of your stomach' feeling. Make this ASAP! You will LOVE it!
And for our dessert, we finished up the last remenants of Christmas/winter in our house;)

Hopefully that means that Spring will be on its merry way soon;)
