Well, after a few days of doughnuts, cheese & carbs, it's ABOUT TIME I got some GREEN back in the blog! :)
In the mix:
- Mesclun mix
- Carrots
- Chickpeas
- 1/2 can of tuna
- Craisins
- Scallions
- Few Garlic Croutons
It may not be a very exciting salad, but it was oh-so-necessary and OH-SO-WELCOME!
And since I don't want to leave you with just another tuna salad, I can also show you my yummy lunch and snack from yesterday which was.......this:
...plus a 1/4 cup of these...(LOVVVEDDD the almonds, so I knew I'd LOVE the cashews!)
....and a sprinkle of these...
= Sooooo good! Perfect lunch for the 80 degree weather that snuck up on us:)
And since I was in the "market" for a new afternoon snack, I thought I'd try out this:
1/2 a cup is 110 calories & 3 grams of fat, which is just enough to keep you full through the afternoon. If you've never tried Quinoa, I HIGHLY suggest giving this one a whirl. Not only is it A.-Already made for you, but B.-It's studded with zucchini & carrot pieces which gives it a great little kick of flavor. Two thumbs up!
Well, after our glourious sunny & spring-like day yesterday, we certianly got shot back down to earth with rain today. Oh well....hopefully this all will bring those May flowers;)

this is the stuff i need right now! i just had leftover pizza and feel VERY guilty....
