Burger & Fries....

MMMMmmmm....I have a good recipe for you guys today!  Dinner tasted like a calorie fest, but was totally guilt free!  Win/win, no?? :)

Sooooo, I'll start with the burgers:  We mixed ground turkey with salt, pepper & diced red peppers and formed them into patties....

But not before stuffing them with low fat mozzarella cheese!!!
Mmmmmmmmmmmmmm...these were so uber flavorful that you didn't need a bun, toppings, ketchup...NOTHIN!  You got the great taste of the red pepper in each bite, with the occasional SURPRISE from the mozzarella.  Awesommmmmme:)

Even better was the sweet potato fries!
I had planned all day that I was just going to dice them and bake em up plain, but I just happened to be perusing Kristin's site at the right time and decided to try out her panko crusted version! 

You diced the sweet potatoes up into fries and dredged them in cinnamon & nutmeg spiked egg whites before dipping them in panko:
Lay out the fries on a cooling rack set on top of a cookie sheet to really let them crisp up from all angles...
And wallah...SUPER CRUNCHY SWEET POTATO FRIES!!!!  Scott said these were the "cheaters way to make the fries crispy without ANY oil."  We will be having these again ASAP:)

And we had our burgers and fries with a little side of corn...which I had to laugh because, after reviewing my pictures for the day, the picture of the canned corn came out the best;)  So here ya go, for your viewing pleasure:)
Sooooo....we got a nice snow storm in NJ last night!  Not the "FEET" I was hoping for, but enough to let me have some breakfast with Regis & Kelly this morning;)  Hope you're having a good day wherever YOU are:)
