Thursday night I had made a very SPRING-Y treat to bring in for my co-workers....Lemon Thyme Bars. I thought they were a little odd, since they were salty, tangy and sweet...but everyone seemed to enjoy them (especially, the Princeton Municipal building...from what I hear;)
Friday also commenced another meeting of the Sassy Salad Club:) This time we made a caprese salad...but the difference for this one was: it was made with ORANGES rather than tomatoes! (And I, not being a huge fan of raw tomatoes, really liked this changes:) We added some diced chicken, cubed mozzarella, oranges slices, basil, olive oil, salt, pepper and of course, lettuce! Light and refreshing....
And Friday night also turned into an impromptu night out...and even though I could throw a stone from my front porch and hit at least THREE pizza places, we decided to take a hike to one of my favorites: Federici's in Freehold, NJ. They have THE BEST Creamy Italian Salad dressing and one PAPER THIINNNNNNNN pizza crust. SO DELICIOUS!!
Another Green Monster was in order after Power Yoga on Saturday morning. This time I made one with 1 cup unsweetened vanilla almond milk, 1 scoop vanilla protein powder, 5 strawberries and 1 banana. And it looked so very pretty and pink...
...Until I added my blenders worth of spinach:)...
hahahhahahaha...it was still good though:) Green is gorgeous! :)
After lunch, I got my oven cranked up to get ready for dinner that night and lunch for TODAY:) First I made a carrot cake. It was actually a Weight Watchers recipe and came out pretty good, so I'll post the recipe soon...
And from the cake, we shifted MAJOR GEARS as I prepped lunch for today: Honey Sesame Tofu! I've only made tofu ONCE, and it wasn't BAD...I just think the recipe I made with it was NOT GOOD. So it was with only TENTATIVE weariness that I tried this recipe....especially since the tofu was marinated in everything I like: Sesame oil, honey, soy sauce and garlic powder (and I threw in some sesame seeds, cause I love them so)....
I ended up cooking them for about 40 minutes, I just wanted to make sure they were EXTRA CRISPY!!! We'll see how lunch goes today;)...
Dinner on Saturday night was grilled pizza again, but this time I somehow forgot to snap a picture...probably from all the chatting with our lovely company:)
And the whole weekend was capped off with a cheese steak and fries that I split with my Mom at the Yankees game yesterday afternoon:) A beautiful day and a great win by the Yankees!!! (Although what are the odds that we show up at a game where Derek Jeter is NOT playing...oh well, next time Mom!!:)
So over all, a good and hectic weekend:) I'm ready to get back to cooking this week even though we actually have NO MENU at the moment, so even I don't know what is coming up for the week! Stay tuned:)

Aww - you were so close - too bad I couldn't join you!! BTW, Nona's homemade dressing used to taste EXACTLY like Federici's. She gave me her 'recipe' and mine tastes NOTHING like it - I really think she left something out on purpose!
