Lovely Lemon....

So...it's Tuesday, which means I can go back to talking about desserts, right?? :)

I just wanted to show you the dessert I made for Easter Sunday. Spring to me = LEMONS and this was just about the most perfect Spring/Summer dessert I can think of! I'm arming you with this now and hope you try it with all this upcoming warm weather;) You can thank me later;) : Lemon Ice Box Pie
And talk about EASY! I think the hardest part was the crust, which was ridiculously easy anyway! You could buy one of those pre-made deals, but I was itchin to try the crust with the world's most tastiest graham crackers from Trader Joe's.
Here was my pie pre-topped with homemade whipped cream (Don't skimp! There is ABSOLUTELY NO SUBSTITUTE FOR HOMEMADE WHIPPED CREAM. NONE! :)
And here was the final product. Scott deemed this "too good"...which loosely translates into "Don't expect the leftovers to last too long." ;)
It was super cool & creamy...although a bit rich for me. I may try to tackle this with fat free condensed milk one day...but only as an "at home" experiment;) Holidays deserve the real deal!
Anyway, try this out...it's delish!

I am definitely going to try this one. Rachel is in love with anything "lemony"... with the possible exception of Snicket. She never could get into those books.

ohh..the pie is MUCH better than those damn Snicket's!! :) hahahahahahhahahaha...she will LOVE it! And it's as easy as your "no knead" bread:)
