Well, I'm back...after a 24 hour hold up from my computer NOT letting me upload pictures! (THE NERVE!) But I suppose it worked out since we were not home for dinner tonight...so instead, I'll show you dinner from last night! And it was a goooood one! Belizean BBQ Chicken with Jasmine Saffron Rice & Sauteed spinach... (sounds fancy, right??;)
The chicken was coated and grilled in a BBQ sauce/rub we had picked up in our travelsss....

I was a little leery of how it was going to taste, but it was soooooooooo delicious! Smokey, sweet and so flavorful! I can't wait to use the rub again in a mix of ketchup & molasses...(thanks for the BBQ tip, A;)
The Jasmine rice I had picked up last week at "Whole Foods." I had a $2 off coupon and (being the supreme sucker for coupons) I figured I'd get fancy and 'switch it up' from our usual brown rice;)...
We cooked the rice in water and added the saffron as the rice boiled down. Once the rice was just about done, I threw in the rest of the "corn & bean salsa" to warm through. Boom...instant Rice & Beans;)
And finally...we steamed a bag and a half of spinach in (5 cloves of...:) garlic and oil....it shrunk down to about 3/4 cup worth of steamed spinach, but I guess that's how spinach likes to roll...
Perfectly simple & delicious dinner thrown together with just a random group of items we had hangin around;) Plus, we got Belize memories out of the deal, so score one for our dinner! :)
And after dinner (and an "American Idol" hiatus)...I went back to work AGAIN in the kitchen. THIS TIME making snacks for "Take your Kids to Work" day and other events going on in the office;) First I made Chocolate Rice Krispie Treats...
I love that Kraft makes FLAVORED marshmallows now! So I used the chocolate and vanilla swirled ones in the 'treats...and since those chocolate COVERED marshmallows were CONVENIENTLY sitting next to the big Jet Puff ones...I simple HAD to get them and throw those in there too! (Good product placement, Target!)
And FINALLY...I was left to figure out what I thought kids would like the best for a treat;) So I figured...Peanut Butter + Jelly + Chocolate = No Fail! The saltines sold me on this one. I am a girl in love with all things Salty AND Sweet!! So I made this recipe...and they were a HIT!! HIGHLY RECOMMENDED!!! :)
Phew, that's all for one night! I'm sooo relieved that I was able to upload my pictures tonight!! I'm hoping to post another part of my Paris blog for tomorrow. (don't loose any sleep though, k??)
