Should be illegal to be THAT good....

Morning, everyone!  Sorry I left you guys hanging after all my 'previews' on Thursday, but Katie's swim class ended up being a bust since Katie seemed a little under the weather on Thursday night (we think that 4 degree ocean might have been the culprit...shocker!) , but our dinner of 'ranch tacos' DID end up being a hit!  So much so that we had them 2 days in a row....because that's how tacos are supposed to be enjoyed, don't cha know??

The rest of the weekend was spent with way, WAYYYYYYYYYYYYYYYYYYY too many indulgences, including a trip to our favorite Greek place, Mikonos, with our niece on Saturday night.  Scott & I shared a sample plate of their 4 best dishes...and I'm too embarrassed to even post the pics cause the plate was SO BIG (but oh-so-FREAKIN-GOOD!) 

 And THEN we did the DAMN THING and visited our FAVORRRITEEE Miss Andre at "Kim's in the Mix" on Sunday afternoon.  While Scott & his sister got the FREAKININSANELYGOOD Chicken & Waffles, his niece & I shared two versions of the chicken.  She got the "sweet," topped with smoked cheese & apples (holy MOLY!), while I got the RIDICULOUS "Sassy," covered with BACON, cheese & gravy (along with mac & cheese and THEBEST apples).  I mean...
It should be illegal for food to be THAT good.

We left (obviously) BURSTING at the seams, but you just CAN'T PASS THIS UP:

So we made an OBSCENE 'take home' order (along with our leftovers) and headed home...

...but it wasn't long after we got there before we busted out the goods for a bite. (and can we just acknowledge how big that Mikonos plate must have been if I was more embarrassed to post THAT picture, but not THIS one???J)
I sampled Scott's carrot cake (divine), along with the hummingbird & pineapple butter cream (a special of the day.)  Both the carrot & hummingbird were CHOCK FULL of textures, and were both nice & smooth without being TOO sweet.  However, Miss Andre's suggestion of the pineapple butter cream cake (top left in the pic) was nearly just too good for words.  The cake layers were so light they nearly melted in your mouth and filled with just enough chopped, sweet pineapple & butter cream to make you just about burst into tears with its perfection.  We all agreed the cakes ALONE were worth the drive, but Miss Andre's tease of the pulled pork sandwich being 'very nice' makes me think we'll be making another road trip up north in the not too distant futureJ

But  maybe not TOO soon....cause Holy HELL did we need a DETOX after this weekend.  It DEFINITELY tipped the scale in the upward direction and I was veryextremelyterribly READY for a healthy WEEK after this one.  Time to SERIOUSLY reel it back in.  (and don't even get me started on the 'very big brownie' in that above picture that Miss Andre suggested to Scott.  I couldn't even LOOK at it yesterday.  Me thinks that, and the cake leftovers, might just be headed to the freezer for another time & another placeJ)  I plan on packing as many fruits, vegetables & good stuff into my days to balance out ALL the bazillion calories fun.

Monday Recap:

9:30am:  Breakfast- Laughing Cow wedge
Ok, ok...that is NOT a healthy or complete breakfast at ALL.  I also had a peach in my purse to round it out, but after meeting a friend & her daughter at Bounce U, I spent too much time running around to even remember I was hungryJ  This is a RARE GIFT, folks!  That's what a race with a 7-year old up a bouncy slide will do to youJ hahahahahaha

12:00pm:  L
unch- Chicken Caesar Salad at Panera (no picture)
Let's just take the fact that I plowed through my salad and forgot to take a picture be enough evidence of how hungry I was after my  teeny tiny 'breakfast.'


1:30pm:  Snack #1- Watermelon


3:30pm:  Snack #2- "Slim Down Smoothie"


5:30pm:  Dinner- Avocado Caprese Salad 
Just seeing this makes me want to whip this one up again RIGHT NOW.  It was sooooo delicious, not to mention LIGHT & REFRESHING, after a few 'over killed' days!
  • Chopped romaine lettuce
  • Roasted cherry tomatoes
  • Diced fresh mozzarella
  • Grilled chicken, coated in Montreal steak seasoning
  • Diced green onions
  • Diced avocado
  • Drizzle of olive oil & sprinkle of sea salt 

It always makes me wonder why I 'hem and haw' over salads some nights when we have options like THIS in the world that are just so darn good!  Every bite was FILLED with different tastes and combos...and could any of them be BAD with all that goodness??  Answer:  No.  Sub-Answer:  This is going on the rotating menu ASAP!

Ya know...besides running around like a lunatic at Bounce UJ  Good thing the first class was SUPER sweaty last night.  Helps me feel a little better about typing up all of the 'chaos' from the weekendJ

Well, it's a dreary one in Jersey today.  Not a surprise coming on the heels of a STORMY night last night.  I was only SLIGHTLY panicking in 'calm & quiet' yin yoga last night when I kept hearing people's 'emergency weather alarms' keep going off in the middle of class...like, 5 times.  It's hard to be relaxed in 'shoelace' when you're wondering if your supposed to be evacuatingJ  hahahahahahahaha
