Colorful crunchies...

Wednesday Recap:

9:30am:  Breakfast- Banana Smoothie
  • 1/2 frozen banana
  • 1 scoop protein powder
  • 1 cup light coconut milk
  • cinnamon & nutmeg

Morning Workout:  Power Yoga
SOOOO fun yesterday with lots of fun transitions and 'float-y moves.'  And thankfully, not TOO hot, given this ROUGH heatwave we've been having this week!


1:00pm:  Lunch- Tuna Melt

Although don't ask what's with me and the HOT lunches during the hottest time of year!  But this avocado tuna on wheat with a slice of melted American cheese just sounded too good to pass upJ

2:30pm:  Snack-  Skinnygirl Chocolate Pretzel Bar
My other Skinnygirl purchase from Target last week, this one is less protein than its counterpart, but no less candy bar-like...which IS the most important partJ


5:00pm:  Dinner- Quinoa Caprese Bake
I sooooooooo could have gone for another round of  cool WATERMELON caprese salad, but have been itchin to make this quinoa version all week!

All you have to do is pour cooked quinoa (mixed with salt, pepper & Parmesan cheese) in a non-stick spray coated baking pan  (about 1 1/2 cups)... 


...top with cherry tomatoes, or in my case, ROASTED cherry tomatoes... 

...a sprinkle of diced basil & a minced or microplaned garlic go on top next... 

...and finally, a layer of sliced mozzarella cheese, a drizzle of olive oil & salt and pepper... 

...bake (in the toaster oven!) at 350 until the cheese is melted (about 10 minutes)... 

And VIOLA!  Caprese bake with extra protein from the quinoa!  Not that I don't lovvvvvvvvvvvve me some "regular" caprese bake, but here's a nice, healthier way to enjoy it now and thenJ 

Oh...and remember that leftover roasted garlic clove I had last week?  Well, I finally used it up and made a SUPER quick batch of GARLIC BUTTER to go along with the best corn of the season thus far... 
I just mixed 2 tablespoons of butter with the mashed roasted garlic cloves and a little salt & pepper.  How can you argue with fresh corn smothered in bits of roasted garlic??J


Evening Workout:  Body Jam Class
Given it was about 13729709284 degrees last night, I REALLY wasn't looking forward to going somewhere where I was CHOOSING to sweatJ  Thankfully the class was SOFUN that it flew by and I was happy to fling myself in the shower the second I walked through the doorJ


8:00pm:  Dessert- BIRTHDAY CAKE BAR 
Seriously, how fun and cheerful is THAT???  Birthday cake ice cream surrounded by crunchies for 130 calories?  I can't complain about this one!

We had our ice cream pops along with our newest favorite show...
Yet another one of our friend's recommendations didn't steer us wrong and we have become OBSESSED with this MAGIC hidden camera show.  The stuff this guy does is INCREDIBLE!  A MUST WATCH.

Well...the reason I'm so behind on this post was that I got myself to the gym this morning for cardio kickboxing (since I missed on Monday) and at this very moment, I think my arms are about to break offJ  MUST wrap this one up...NOW!
