Gettin down on Friday...

Well, it was either skip a day of posting OR today's post would have been a sole plate of leftover spaghetti as that was our dinner last nightJ hahahhahahhaa  Sooooooooo to help speed up your FRIDAY, we'll go back in time a bit to show you lunch and dinner from Wednesday!

OK...so thankfully, this round of Pineapple Chobani did NOT end up with a bubbling tongue & a toss in the trash.  My love for Pineapple Chobani has officially returned, albeit, with a lesson in NEVER freezing/defrosting it!
And I forgot home much I LOVVVED Apple Pie Larabars.  They are just so sweet & spicy and taste nearly like a full blown Apple Pie, made with ALL NATURAL ingredients!  LOVE!

Dinner on Wednesday night required a VERY intricate & complicated recipe involving:
  • A food processor
  • 5 minutes!
Sweet, right???  After our great success with our homemade red pepper hummus last week, THIS week I used the leftover sauteed leeks, onions & scallions and whipped up a SUPER QUICK triple onion hummus!!!

Into the food processor went:
  • 1 can chickpeas, drained & rinsed
  • Triple Onion "medley"
  • 1 tablespoon tahini (or olive oil)
  • salt & pepper
Pulse for about 30 seconds, adjust the amount to tahini/oil for a creamy consistency and DONE!  As much as we loved the red pepper, the triple onion just KICKED ASS!!!!!!!!  (Probably helped that we're huge onion fans, sooo...J)

To switch it up from the Naan, this week I bought some of this Lavash from Trader Joe's...
It was pretty bland (almost like a soft matzo cracker), so I brushed it with a bit of olive oil and sprinkled it with garlic powder and this SMOKED sea salt that I had picked up from Reading Terminal Market a few weeks ago...
Cool, right???  I like anything smoked.  I think I'd eat my shoes if they were smokedJ

I popped it in the toaster oven until the edges started to brown...

And then broke them up into my own garlic/smoked salt crispy lavash chipsJ

Scott took the sandwich route and filled the lavash with hummus and leftover tabbouleh.  He liked it, but he ended up going back to make himself some "awesome garlic & salt" chips tooJ

On the side: NOT WATERMELON!  I know...pick yourself up off the floorJ  Instead we had salads with this yogurt blue cheese dressing that my friend had recommended...
It has all the taste of blue cheese dressing but with all the health benefits of yogurt and only 50 calories per 2 tablespoons.  Not too shabby in the "blue cheese world!"

Alright...so I may have skipped a day, but I am going to have TONS to show you from this weekend!  Me thinks it's going to be a delicious one from start to finish....and by start I mean: 12:31 when I get this party rollin!J  Stay tuned and have a good FRIIIIDAY!

What a great idea for the lavash. I have some in the fridge which I used to make some wraps but I only used 3 so I thought, hmmm I really dont want to trash this but I know it's going to sit here in the fridge until it goes dry...I'm making these chips and saving my lavash!!

I love Chobani and Larabars! I've had that happen with my yogurt before too. It was a Stonyfield caramel greek yogurt and the caramel in the bottom changed to a bizarre consistency. Bad news.
