Still sleeping...

I swear, the longer I sleep at night, the slower I move when I wake up the next day.  Sunday-Tuesday this week, I went to bed after 11 and woke up like a bat out of hell ready to work out and get the day started.  Last night I passed out somewhere around the 8:30ish time frame and have been moving backwards ever sinceJ  Including getting this blog posted todayJ hahahahahahhaahh  I guess TOO much sleep is trueJ

ANYWAY, so we had a colorful dinner last night, no???
It may have been the moment Scott had realized what his life had "turned into" as he said out loud:  "We're having naan with hummus, couscous salad & watermelon."  To which I replied "Never thought you'd see the day, huh?"  Me neither, Scott!  Me neitherJ

So item #1 was our 1-2-3 meal, as I like to call it.  A piece of garlic naan covered with hummus and tabbouli....

But to get some 'culinary skills' in there, we actually DID make the hummus homemadeJ
We mixed:
  • 1 red pepper, roasted for a half hour at 350
  • 1 can chickpeas, drained
  • 1/2 onion
  • 2 tbsp. of oil OR one of my FAVORITE ingredient:  Tahini!
Whirl it in a food processor (adding more tahini or oil) until you reach a creamy consistency and devour!  Homemade hummus is where it's AT!  I already have an idea for a new fangled flavor next week...tee hee heeJ

Anyway, on the side was our favorite confetti Southwestern couscous salad....

And the always beautiful, and seasonably appropriate, watermelonJ  They are getting sweeter & sweeter by the dayJ
So how's that for a 1-2-3 dinner and all of the flavors were a knock out!  The dinner just felt sooooo light & healthy!  LOVE!  Try it out, would ya??J

So I must share this little confession, despite my efforts to try to REALLY not be starving when I come home for dinner, yesterday proved to be a bit of a challenge.  You see, I had laid out quite a nice spread for breakfast & lunch yesterday....
...the only problem being that the Chobani yogurt container looked like it had been pumped full of air when I took it out of the fridge.  So it was with mild trepidation that I opened it as part of my lunch yesterday.  Ummm...let's just say it smelled like YEAST and just about BUBBLED on my tongue!  YEEE!  The expiration date was until July 14th, so my only guess was that the yogurt FROZE from being on the top shelf of the fridge and apparently DEFROSTED yogurt is no bueno!  How crazy is that???  So quite a few extra spoonfuls of couscous salad found their way to my plate thanks to my depleted lunchJ  Bummer, right?? hahahahhaha....

Anyways...I just thought you'd appreciate that bizarre-o story!  Hope you guys had a great Thursday and are ready for the rapidly approaching weekend! (I know I am!)  Have a great nightJ
