So dinner last night was one of those dishes that I thought was going to be super complicated and take soooo long to make, until I looked up from my plate lined with leftover crumbs and realized how quick it actually all came together...and it's a gooooooooooood one! Stuffed flatbread sausage sandwiches (based on this recipe)...
Trust me...you're gonna want to go home & whip these up tonight!!!
First, Scott started by tossing a couple ears of corn, a chopped yellow pepper and some onions on the grill...
...and letting them char up a bit...
After that, I got to working of the "sandwich part." First I divided the dough into 3 parts and rolled them out into large ovals. Next I filled half of the dough with the "de-eared" grilled corn & some cheddar cheese...
...folded the other end of the dough over and gave it a quick pinch...
...before rolling out the dough one more time to stretch out the dough and seal in the fillings...
We tossed the dough on the gril,l along with the mango sausage, to cook until they all got those great grill marksJ
Once everything was done, we brought the dough in and coated half of each with a Greek yogurt, scallion, lemon juice & sea salt mix...
(didn't think this would be essential but the creaminess it adds is top notch!)
Finally, we diced up the sausage, peppers & onions and tossed them on top of the yogurt mix. Fold over the dough and here ya go!
Sweet corn & sausage, savory peppers & onions, creamy yogurt, gooey cheese and a chewy crust = Awesome! One bite and I was quite pleaseJ Definitely give these a try...like I said: They come together a LOT faster than they seem and are JUST. SO. GOOD!!
And of course, we had these savory sandwiches with the summer sweetness...
And speaking of sweetness, we finished off the night with another sample from Cupcakes by Carousel. This time, the cookie dough cake...
I was worried as I am a HUGE FAN of the "half baked" cupcake from Crumbs, but this one was another "melt in your mouth" number. Their cake is just PRIMO (and that's after being DEFROSTED!) Soo good!
And I'll give you a quick peek of my rather COLORFUL breakfast & lunch from yesterday....
Multigrain waffle (with mango butter) and watermelon for breakfast...
...and then homemade hummus with pretzel thins for lunch & some couscous salad for snack...
...and finally, the thing that held me over till dinner: a pretty peachJ
So hope you guys are ready for a relaxing weekend! I already got mine started at 12:30 today!! (yeah summer hours!!) and looks like I'm about to dive into "The Girl with the Dragon Tattoo" while ANOTHER fierce thunderstorm comes rolling through NJ! (last night's was INSANE!!)
