So what to do with that bin full of random leftover veggies??
Our answer on Sunday: Make a stir fry!
We tossed a whole mess of veggies in the pan...
- Broccoli
- Bean Sprouts
- Carrots
- Baby Corns
- Onions
- Yellow Peppers
- Water Chestnuts
And let it all wilt with a little of this marinade I had picked up from TJ's....
Who says you need meat in a stir fry?? This dinner was MORE than satisfying with all of the fresh veggies. The sauce was good too, albeit a little on the sweeter side than I normally like. Tough to compare "Island" sauce to Garlic & Green onion though, ya know...
OK, OK...this dinner did come with a bit of an 'impulse purchase' on my part. Thankfully this stir fry healthfully squashed my desire for the greasy take out that I was craving, but when I saw these chicken egg rolls in the deli portion of the grocery store, they just looked too perfect to pass upJ
So a little decadence matched with a meal on the healthier side. I thought that was a decent balance, right? Much better than giving in to that Chinese take out speed dialJ
And we did have a bit of a treat for dessert, as we finally cracked into our stash of Cupcakes by Carousel from our trip to Ridgewood...
An hour out of the freezer, and the chocolate cheesecake cupcake was as good as new....
Having had so many good cupcakes, that it was with much trepidation that I sampled my first bite to see where these babies ranked among the legions....
...but I must say I was pleasantly surprised! The cake portion was very light & airy and nearly melted in your mouth, while the frosting was rich & savory without being TOO decadent. Yeah, Carousel! Glad these ones lived up to the hypeJ

Thursday: 3 mile "Walk away the pounds" with 8's
Friday: Jillian Yoga-Level 1
This was a bit of a lighter week for me than usual. That yoga retreat from last Monday REALLY wore me out for nearly the entire week, so I just listened to my body and worked out when I felt OK enough to do so. I took it easy when I felt like I needed it and then jumped out of bed super ready to get started on a new week this morning!

Yum! I love plain veggie stir fry. I always end up over cooking the meat anyway.
