Seasonally Appropriate...

I'm nothing if not 'seasonally appropriate', right??  So how bout today's 'Weird Tradition Alert':  Ever since Scott & I started living together we always break out this recipe at least once when the weather starts warming up:
Not sure if it's the word "Spring" in the title...or really, just the excuse to eat french fries as part of your main mealJ  Either way, it's always a hit!

We start with the "chili" layer made from ground turkey, white beans, garlic, onion and (the "green") tomatillo salsssaaa....

Next goes on a layer of diced scallions and fresh, chopped parsley...

And finally...let's be honest, just about everyone's favorite part:  The 'top' of the pie....

And not just ANY fries...but Trader Joe's 'Dripping in garlic' fries! J
OK...this might be sensory overload for the 'garlic faint of heart' mixed along with the slightly tangy chili, but it made for a happy household for us garlic (and chiliJ) loversJ

We'll definitely be keeping the tradition alive of always welcoming Spring with this fries pieJ

And for our dessert, we split a Crumbs Carrot Cupcake.  But I must say, we both agreed that they were NO MATCH for the Carrot cakes from Sweet Eats.  These were good, but Sweet Eat's slightly savory frosting and super spicy cake are just too tough to beatJ

And speaking of spicy, while I was home on Wednesday, I made myself a nice, warm breakfast of "Pear Crisp Oatmeal".  And thankfully, I had enough foresight to make a double batch so I got to "grab & go" with a container this morning!  It was sooooooooooooooooooo good!  So go ahead...make 2!  Might as well have 2 fabulous breakfasts rather than just 1!

Pear Crisp Oatmeal
Makes 2 servings 
  • 1 cup dry oats
  • 1 & 1/2 cups unsweetened vanilla almond milk
  • 1 tablespoon + 1 teaspoon brown sugar
  • 1 diced pear 
  • 2 teaspoon vanilla
  • 1 tablespoon + 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
Mix all of the ingredients together and pour into 2 small baking dishes. Bake at 375 for 15 minutes. While the oats are baking mix:
  • 1 tablespoon + 1 teaspoon chopped pecans
  • 1 teaspoon butter
  • 2 teaspoons brown sugar
Divide between both dishes to top oatmeal and cook for 10 more minutes.  Enjoy fresh out of the oven or microwave the leftovers for 3 minutes and you are good to go!

So is everyone happy it's Friday??  I'm sure my lucky duck husband, who has off for the day, is liking it even more;) hahahahahahha!  Although I was super happy to get in my first 'post cold' workout in this morning and it felt SOOOOO good!  (wasn't sure how my stuffy nose was going to handle too many 'downward dogs' hahahahhahaJ) It felt so good to start off the day STRONG!
