Cold Nights = Hot Soup ;)

Well...long gone are the days where I was looking for excuses to make soup:)  With the weather we've been having, I could be eating soup for 3 meals a day:) hahahahahaha  AKA.-It's Cold...VERY cold!  :)  And it was SUCH a 'perfect' blustery winter day yesterday, that I was sooooooooooo very happy that I knew I was coming home to THIS:
Baked Potato Soup!!!!!!  Fabulous, right???

Made even MORE fabulous by the fact that we had baked the potatoes along with the chicken on Monday night, so all we had to do was warm them up & mash em!  A little prep, folks!  That's all it takes:)
And thanks to the minus-1-hour of cook time (and despite an 11th hour run to the store for more milk!), this soup was pulled together in about 20 minutes!

If you loveeeee baked potatoes (as I do:) and love all the good stuff that goes with em...well, then you'll LOVEEEEEE this soup:)  It was SUPER hearty from the mashed potatoes and very creamy from the milk & sour cream combo.  Absolutely-stick-to-yer-ribs-Awesome! :)

And that wasn't the only thing cookin up in my kitchen last night, as I decided to whip up a batch of Eggnog muffins with Nutmeg-Cinnamon Streusel for breakfast this morning:)  (I ditched the cranberries and HALVED the "topping" recipe.
They were a yummy, decadent and Christmas appropriate breakfast;)  Could have used more eggnog flavor though;)  I used the TJ's "Light" eggnog for the recipe.  This stuff is OK....good for recipes, but I wouldn't really drink it straight...

HOWEVER, for a DELICIOUS LIGHT "EGGNOG EXPERIENCE"...I HADDDDDD to show you my lunch from yesterday!
I picked up the non-fat Target brand Eggnog yogurt mostly because they were on sale, but I didn't have too much hope for it.  Well, let me tell ya:  THIS STUFF IS GOOOOOOOOOOOOOOOOOOOD!  It ACTUALLY tasted like EGGNOG!!!!  AND FOR 90 CALORIES & NO FAT!  Seriously, that's barely even POSSIBLE in the Eggnog realm!  It was GREAT straight (along with my delectable Peanut Butter Cookie Larabar:)...but I imagine it would be AWESOME FROZEN!  Especially since I'm the only one in my house that would eat eggnog ice cream and the gallon would last until July (like last year;).  So this might be my perfect 'single serving' eggnog fix!  Thanks Tar-get! :)

Tired of hearing about 'Nog yet?  OK....so let's change the subject to my goal for today:  Finalizing my Christmas cookie list and getting my shopping list together of odds & ends.  However, NOT on my list is chips.  In any flavor or form.  I think we have enough:

The soup looks delicious!! I have been wanting to make a corn potato chowder and this weather is perfect for it!!!
Can't get over how chilly it has been!!

I love potato soup, yours looks delicious! And now I have to try Target's eggnog yogurt!
