Sooooo...last night we decided to delve into one of our little treats straight from the pork store in Brooklyn;) Andddd just to balance it a little better (and before the TRUE eggnog-nonsense commences shortly;), we thought we'd add a little healthiness to our little bit of decadence;)
OK...so first, the healthy: I had this hot bacon (OK...OK...sorta healthy) spinach salad rolling around my head all day and knew it would make a perfect compliment to our "main event"....love the bacon, scallion & craisin mix!
And now the decadence:) As soon as we saw these behind the counter, we knew we had to snag a few:) One of our old favorites: Rice balls and a NEW favorite: Prosciutto balls!
Melting...we were melting:) As you could imagine, all this carb-y, cheese, salty, crunchy fabulousness was JUST to die for;) At least we had the salad to make us feel a little "lighter" hahahahahhahahaha....gotta balance your good with your realllyyyyyyy good bad;)
And after dinner, I swiftly got busy chewing a nice slice of Key Lime Pie....Extra sugar free gum, that is! It always helps with saving me from sneaking too many tastes while I bake or make up cookie plates for my work folks!

- Salted Double Peanut Butter (Chunky Peanut Butter & Peanut Butter chip cookies rolled in salt & sugar:)
- Oatmeal, Toffee, Milk Chocolate Chips, Dark Chocolate Chunks & Sea Salt Cookies
- Magic Bars
- Peppermint Hot Cocoa (Chocolate Cookies with peppermint pieces and marshmallows!)
Didn't I say I was beat??? I thankfully had the help of a great "elf helper" (who was paid in Espresso Crinkles;), but phewwww...I'm already tired of cookies:) Good thing I'm sticking to my workout schedule this week....despite being tired AND getting the LAST parking spot at the gym on a coooollld night! What's up with that??? December is suppose to be the month 'o plenty in the gym parking lot universe! hahahahahhaha...oh well, gotta keep rollin! ;)
And just so you know: As I sit here, I currently have ZERO clue what were having for dinner tonight (a TRUE rarity)....so you'll be just as surprised as me by tomorrow's post;) Have a great day:)

Prosciutto in rice balls sounds fabulous! We love making risotto into fried balls of yumminess. Thanks for a great idea for making them even better!
I wish I could say I made them, Kristen...but I can't claim that glory...I just reheated them:) hahahahahaha...
