My Work Here is Done....

Sooooo...I inadvertently saved us from a scrambling.take out/cereal night yesterday, since Scott reminded me that I had bought potatoes over the weekend so we could use our leftover chili forrrr....
Our chili baked potatoes:)  Quick, simple, warm & cozy!  Perfect for a busy bee week that has been THIS week:)

But I did manage to squeeze in ONE. LAST. BAKING. "PROJECT" for the work.  Since my company closes between Christmas& New Years, making TODAY our last day of work of the YEAR:  I figured nothing said "CELEBRATION" MORE than EGGNOG RUM CAKE:
Yes, you heard me correctly! :)  And this cake was NOT lacking in holiday "spirit," let me tell ya.    Merry Christmas indeed:)
And this was SUPERRRRR easy...it might just be making an appearance for New Years Eve as well;)

Eggnog Rum Cake
  • 1 box vanilla cake mix
  • 1 small box instant vanilla pudding mix
  • 1/2 cup rum (Captain Morgan:)
  • 1/2 cup eggnog
  • 1/2 cup canola oil
  • 4 eggs
  1. Preheat oven to 325F. 
  2. Combine all cake ingredients and beat for 3 minutes.
  3. Pour into greased bunt pan.  B
  4. Bake for 1 hour, or until knife comes out clean. 
While cake cools in the pan, make the glaze...

Eggnog Rum Glaze
  • 1 cup sugar
  • 1 stick butter
  • 1/4 cup water
  • 1/4 cup rum
  • Sprinkle of Nutmeg
  1. Combine all ingredients in saucepan and bring to a boil. 
  2. Boil for 3 minutes, stirring constantly. 
  3. Cool glaze for a minute before pouring 3/4 of the glaze over the cake in pan.  Allow the glaze to soak into the cake. 
  4. Invert cake onto plate and pour the rest of the glaze over top of the cake. 
  5. ENJOY!!
(I let the cake sit over night to realllllllly soak up the rum.  It was worth it...The rum was actually AUDIBLE when you cut into it:)

Well...in a few short hours I am a FREE WOMAN till NEXT YEAR:) (Don't you love saying that??)  I have a few odds and ends things I want to get done over the next few days (One last clean sweep of the house, work outs, last minute wrappings...), but first I'm having my traditional "Last Day of Work" lunch with my girls:)
