Well...better late than never, right? :) Even though it's almost WEDNESDAY (Thank God!), I'm finally catching you up on our dinner Sunday night. And the reason I'm *extra* proud of this one was because it was a Scott original ;) He mentioned the recipe Sunday morning...we just happened to have everything on hand....and so was made:
Scott's 4 Bean & 4 Onion Turkey Chili
First, the basics:
- 1 28 oz. can crushed tomato
- 1/2 can of water
- 1 can diced tomatoes
- 1 can tomato paste
- 1 pound of turkey, browned & flavored with chili powder, chipotle chili & cumin
- (the turkey is an easy deletion to create a vegetarian chili...but it was Scott's creation, so I let him have free reign...and he wanted turkey;)
And now the Good Stuff:
- 1/2 large red onion
- 1 sweet onion
- 3 chopped scallions
- 3 chopped leeks
- 1 can red beans, drained & rinsed
- 1 can black beans, drained & rinsed
- 1 can chickpeas, wild guess;)
- 1 can white or large butter beans, rinse em either way;)
Combine all of the ingredients in a slow cooker and cook on low for 5 hours....
Mmmmmmmmmmm....the slow cooking time let the onions break down and completely saturate this dish with delicious flavor! Love, love, loved it! If you love onions (and beans;), I highly suggest this recipe from my fella's noggin;) hahahahahahahahha....
And don't mess around...make sure to dress your chili in it's Sunday best aka-sour cream & a sprinkle of cheese:)
The rest of Sunday was spent in the kitchen finishing up my Christmas cookies...and I honestly think I've been exhausted ever since;) hahahahahhahaha I was FINE until around 9:30am on Monday morning, and after THAT, I was just ready for it to be Christmas Eve morning;) Soooooooooooooooo looking forward to our break! 1 1/2 more working days left of 2010! Hallelujah! :)
