After an absolutely FANTASTIC Friday night....we knew the 2 things we DID NOT want on Saturday: Bread or Meat! :) hahahahahahahha....can you blame us?? :)
I started off Saturday with a bowl of Quaker Oatmeal Squares with Blueberries & Unsweetened Almond Breeze....
Which tasted even better on the BREEZY SUN PORCH!!!!!!!!! It feels like we hadn't been out there in SOOOOOOO long! TOO HOT! But Saturday was a PERFECT day to get reacquainted:)
And after a 2 week hiatus, we also got reacquainted with the Farmer's Market...and we STOCKED UP:
I have ideas for ALL of this stuff this week:)
I'm excited to try the Raspberry Vinaigrette I got from "the corn folks" :) .... (they had a "Apple Cider Vidalia Onion" dressing that I'm DYING to try...but I have to wait for FALL :)
And I even got my own aromatic bouquet to decorate my kitchen counter;) hahahahhaha...
And after some blissfully difficult power yoga (seriously, yoga + wind chimes = a piece of heaven), we both had dueling GREEN MONSTERS for lunch! It had been WAY too long since I had one of these, and it tasted FABULOUS! :)
And for dinner, we managed to sneak in even MOREEEEEEEE vegetables. A LOT more! :) What started out as this:
Turned into THIS:
I followed Kristin's recipe and made a Grilled Vegetable Salad:) Onto the grill went:
- Zucchini slices
- 2 ears of corn
- Sliced Red Onion
- Halved Red Pepper
We diced those up, mixed them in a bowl with some diced cucumber & (toaster oven roasted) tomatoes and served it on a bed of lettuce with some balsamic glaze (1 cup of vinegar reduced to a 'syrup thickness').
I don't know if it was the delicious grill kissed vegetables, the fresh (non-bread or meat) taste, or the sound of the rusteling leaves while we ate that made this salad sooo AWESOME!
I even said to Scott "As good as those cheesesteaks were, this tastes JUST as good right now" :) hahahahhahahah....and he even agreed!! :) We capped off our gorgeous weather night with a walk in the park with Penny and some "Jersey Shore" :) A pretty perfect night as far as I'm concerned:)
And Sunday started out pretty delicious as well:) Since Scott's birthday is THURSDAY, I thought I'd start off the celebration with a breakfast that I knew he'd enjoy: Cappuccino Chocolate Chip Muffins...
WITH Chocoalte Chip Espresso Spread! Yummmmmmmm!
For lunch, I broke into my stash of pretzels (I've been LOVING PRETZELS lately!) and had them with my very, very favorite brand of hummes: Cedar's Original Tahini. Mmmmmmmmm....LOVE IT!:)
And I also had one of my MONSTER peaches that I bought at the market:) I took one bite and it was pure bliss:) And these babies only get better the loooonger they sit...if they last that long! There's nothing quite like a ripe summer peach! :)
Anddddd...our steak ban actually ended here since we had them for dinner at my in-laws house:) That, along with a cake that almost set on fire from the candles made for a very interesting evening:) hahahahahahahhaa....annnnnnnd I have a feeling there shall be MORE cake in the near future...sooo, good thing we got in all those veggies when we did;) hahahhahaahhaha....
