Yesterday's dinner may just have been the most delicious meal, made in the shortest amount of time EVER!!!!!!
We started with this bread as our base:) It's just so perfectly flavorful with a little spicy garlicky KICK.....
We placed it face down on the grill for a few minutes and then, just to not miss out on any extra flavor, I rubbed the bread with a clove of garlic:) YUM!
Next, I halved some cherry tomatoes and popped them in a skillet for about 10 minutes until they "burst".....
And added that layer to the bread... looooking good:)
Next, I mixed arugula, basil, 2 diced slices of prosciutto and a little lemon juice, olive oil, salt & pepper to make a quick salad...
And placed a GENEROUS layer on the bread....
And finally...the crown jewel: Shaved Parmigiano Reggiano Cheese:)
That, combined with the grilled zucchini slices made this meal go from vegetable bin to table in about 20 minutes! And better yet, there was hardly ANY clean up!! Can you beat that???
It might have been bit of a mess...but oh my heavens: Yet another dish with an emphasis on FLAVOR!!! It was an explosion of crunchy garlic bread, tangy tomatoes, salty prosciutto & parmigiano all topped with the flavor power couple: Arugula & Basil! This was TO. DIE. FOR!
Isn't there a theory that your taste buds need to try certain foods some many times before you like them?? If that's true, that is DEFINITELY the case for me with arugula! I always was just a 'passive fan' and now I can't get enough of the stuff!! It just adds SUCH another dimension of FLAVOR. LOVVEEEE IT!!!
And since dinner was so easy, I got busy on my 'baking project' of the evening. Last week Scott's cousin brought me over a bag of dough to make "Amish Friendship Bread"....I followed all of the instructions and after 10 days, last night was the day I divvied MY dough up for 3 lucky recipients...;)
Annnnnnnd baked my share of the bread! (how much do I love a toaster oven that can bake TWO loaves of bread at the same time???)
Sighhhhhh....my house house smelled like THIS from the glorious cinnamon & sugar...
I can't wait to try a slice for breakfast tomorrow....but from my co-workers reactions: It appears to be pretty good!!! Thanks again, Laurie for "spreadin the love" :)
And in NON-food related news: So, if you know me, you know that I'm a huge 'remember-er' of dates and such. Sooooooooo....it is with that tidbit that I must share that yesterday had been 3 years since Scott & I rolled into Lancaster, PA, "My cousin Vinny" style, to pick up my little Penny! (oh, it was a sight...me in my cabana printed dress, camera in hand, having ZERO clue we were picking her up at an Amish home! It was...attractive:) But anyway....here was Miss Penny's first picture ever...
Could you die??? I can't believe she was ever so small!!!
And here she is now and how you'll typically find Penny and "Father" on a random night:) hahahahahahhaha....
Crazy how time flies!!! Just thought you'd enjoy that trip down my memory lane:)

Yum - this seems so similar to a salad pizza that I've been addicted to lately. Woohoo - now I can make it at home. :)
